Ingredients:
- 2/3 cup eggnog
- ¾ cup heavy cream
- ½ cup milk
- 5 egg yolks
- 1/3 cup sugar
- 1/8 tsp nutmeg
Instructions:
Heat the oven to 300˚, with the rack in the middle
Bring a small pot of water to boil. In a double-boiler, combine dairy and nutmeg and simmer over medium heat.
Whisk together yolks and sugar.
Pour heated dairy into yolks in a slow stream, stirring constantly.
Pour into ramekins, and place in a pan. Pour hot water into the pan until 2/3 up the side of the ramekins.
Cover pan with tinfoil and poke a few holes for ventilation.
Bake until the centers of the custards are solidified, around 30 minutes.
Remove from pan and place on baking sheets. When cooled, refrigerate overnight.
When ready to serve, sprinkle an even layer of sugar on top of the custards and brûlée with a kitchen torch.
