Dandelions are often the first flowers to grow in disturbed or barren landscapes such as a forest after a wildfire, making them a ruderal species. Every part of this beautiful wildflower from root to yellow head is edible and highly nutritious.

Hope you love our first spring art this year.

The afternoon my ankles thawed
the valley salted itself. The skyline
was a catch of shrimp paddling
to de-tail me back into a human.
From the human came opal  
dandelions, came pollen & petal,
came grain & powder.
I used to want you whole, they said.
The mountains were a story
of aberration. Between the red
rock chasms, spiders dropped
from the lack of air. They lost
limbs. I heard snow fall 
in my dreams. I was a guardian
of lemon & birthstone. I hiked
a trail, collecting rinds.
My pockets filled with opal ice.
You can grate a home out of peels.
You can hollow a wall from wind.
You can dance on a brick staircase
fighting with your feet to frost
or shed until you turn to salt.

I humbly propose substituting katniss/wapato/duck potato tubers for the russet potatoes in this recipe to create an entirely Everlark dish! (Which would probably pair stunningly with cheese buns!) 

According to Hank Shaw (Hunter Angler Gardener Cook - his site is a positive treasure trove!): “The texture of the peeled duck potatoes is drier and fluffier than regular potatoes, and if you make mashed wapato you will need a bit more cream and butter — but that’s not such a bad thing, is it?” (x)

The Dandelion (Taraxacum) is seen as a great nuisance of a weed, but it is a herb with medicinal and indeed magical properties. They have existed for some 30 million years in Eurasia, and are said to have been brought to North America on the Mayflower in 1620. The English word “dandelion” comes from the French dent de lion, meaning ‘tooth of the lion’ and referring to their leaves. It’s also known as ‘witch’s gowan’ (gowan is a Scottish and northern English word meaning ‘white flower’), ‘Irish daisy’, ‘monk’s head’, and even ‘piss-a-bed’ owning to its diuretic qualities.

Even today when much magic and folklore is forgotten, dandelions remain associated with wishes: make a wish, blow on a dandelion, and the seeds will carry your wishes to the gods, the fairies, your ancestors, or whoever you make your wish to. They can be also used in a similar way to get rid of something, like bad habits for example - blow on the dandelion with intention, and the seeds will carry away anything you find harmful. In Greek mythology, the dandelion is associated with Hecate as, for thirty days, she gave Theseus dandelions to eat in order to give him strength to slay the Minitour. And indeed they do contain high amounts of vitamins A, C, and K, as well as calcium, potassium, iron, and manganese.
