Legumes (chickpeas, peas, lentils, peanuts, and yes soybeans) and fungi (mushrooms, yeast/yeast derivatives) are probably the right way to go, if you live in the uk then marmite or yeast extract? Seitan is wheat proteins from flour so thats fairly cheap, thats most of the main non-soy things i would think if youre 100% vegan. Im neither vegan nor vegetarian, im just a culinary student, so sorry if this is fairly bog-standard advice.

i found some chickpea tofu recently, which was certainly interesting. it wasn’t bad, but it was quite different from soy tofu lol

those are all things i’m relatively aware of, but i definitely don’t know enough about them yet, so ty for reinforcing some of these! think i’m gonna look further into seitan & similar vegetable proteins specifically.
