The cheetah (Acinonyx jubatus) is an atypical member of the cat family that is unique in its speed, while lacking climbing abilities. Therefore it is placed in its own genus, Acinonyx.
It is the fastest land animal, reaching speeds between 112 and 120 km/h in short bursts covering distances up to 460 m, and has the ability to accelerate from 0 to 110 km/h in three seconds, faster than most supercars.
The adult cheetah weighs from 40 to 65 kg. Its total body length is from 115 to 150 cm, while the tail can measure up to 85 cm in length. Males tend to be slightly larger than females and have slightly bigger heads. The cheetah’s chest is deep and its waist is narrow. The coarse, short fur of the cheetah is tan with round black spots measuring from 2 to 3 cm across, affording it some camouflage while hunting. There are no spots on its white underside, but the tail has spots, which merge to form four to six dark rings at the end. The cheetah has a small head with high-set eyes.
There are several geographically isolated populations of cheetah, all of which are found in Africa or Southwestern Asia. The cheetah likes to live in an open biotope, such as semi-desert, prairie, and thick brush, though it can be found in a variety of habitats.

The Ultramarine Grosbeak (Cyanocompsa brissonii, old Passerina brissonii) is a species of cardinal (bird) in the Cardinalidae family.

Its natural habitats are subtropical or tropical dry forests, subtropical or tropical moist lowland forests, and subtropical or tropical dry shrubland.

Really into a veggie burger these days! Which were almost nonexistent in Tokyo until recently, so score.

Top is the Superior Burger in Shimokita. Nice pickles, great flavor combo, great potatoes, patty so vantablack it doesn’t show up on camera. Bottom is the fried tofu burger with cheese sauce at An Solas in Yoyogi—one of the most satisfying textures of my life to date. I am actually regularly haunted by the memory. Their meat burgers look nice too… but honestly I’m never even tempted.

Yields 20 sandwiches

The things you’ll need

Ingredients
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1/3 cup sugar
  • 1 tablespoon vanilla extract
  • ¼ cup melted butter
  • 2 egg yolks
  • Egg yolk wash
  • 1 tablespoon White Nonpareils
  • ½ cup dark chocolate
  • ¼ cup cream
  • ½ teaspoon Green gel color
  • 1 cup Coconut
  • Red and yellow buttercream
Equipment
  • Medium bowl
  • Spoons
  • Whisk
  • Rubber spatula
  • Rolling pin
  • Plastic wrap
  • Cookie sheets lined with parchment
  • Brush
  • Bowl for wash
  • Piping bag with #12 tip for the ganache
  • Piping bag with #5 tip for the yellow buttercream
  • Piping bag with #5 tip for the red buttercream
  • Toothpicks
  • Small cutting board
  • Scissors
  • Small saucepot
  • Heatproof bowl

Let’s get started!

  1. Preheat oven to 350°F.
  2. In a medium bowl mix the flour, baking powder and salt.
  3. In a large bowl, mix the sugar, vanilla, melted butter and yolks.
  4. Add the dry ingredients to the wet and mix until well combined.
  5. Wrap the dough in plastic and chill for 2 hours.
  6. Roll the dough on parchment paper to ¼ inch thick.
  7. Lay plastic wrap over he cookies and use a cutter to cut out the cookies over the plastic wrap.
  8. Move cookies to a cookie sheet lined with parchment and brush with egg yolk wash. Sprinkle half the cookies with white nonpareils.
  9. Bake for 12 minutes.
