Squid Noodle Soup, a Taiwanese Night Market Dish | frites & fries

Celery is used in Taiwanese cooking, but it is a different than what you see in the conventional North American grocery store. The stalks of leaf celery — used in East Asian cooking — are much thinner than the common celery. It’s also an important component of this Taiwanese night market dish: squid noodle soup.

For 2-3 servings:

  • 6 oz. squid rings (I used The Town Dock’s calamari rings)
  • 1 tbsp. vegetable or canola oil  
  • 1 medium-sized shallot, minced
  • 1 tsp. dried shrimp
  • 1 oz. ginger, cut into matchsticks
  • 5 c. water
  • ½ tsp. ground white pepper
  • 1 ½ tsp. kosher salt
  • 4-5 oz. thin rice noodles
  • 1 celery rib or 2 leaf celery stalks, finely chopped
  • 2 tbsp. rice wine
  • 1 tsp. sesame oil

Over medium heat, fry shallots in until golden brown in a small pot. Add in dried shrimps. Saute ginger until fragrant. Add in water and bring to boil.

Add white pepper and salt to taste, then add rice noodles and bring to a boil. Stir; add celery and rice wine. Bring to a boil. Remove from heat and finish with sesame oil.
