Ingredients:

  • ¾ cup milk
  • 3 tbsp white vinegar
  • 1 cup all purpose flour
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tbsp sugar
  • 1 egg
  • 2 tbsp melted butter
  • cooking spray or butter for greasing the frying pan

Directions:

  1. Combine milk and vinegar in a large bowl and let stand for about five minutes to let the mixture become sour.
  2. Combine flour, sugar, salt,baking powder and baking soda in another bowl.
  3. 3.Add in the egg and melted butter into the milk-vinegar mixture and gently whisk.
  4. Combine the liquid ingredients into the flour mixture gradually until a smooth batter is achieved.
  5. 5.Heat a medium pan over medium heat and grease with cooking spray or butter. Using a soup ladle,spoon about ¼ cup of batter into the pan. Once bubbly on top, flip the pancake gently using a flat cooking spatula. This takes about a minute or two. Cook other side for another minutes or less, or until that side  is golden brown.
  6. Top with  a dollop of butter and drizzle with syrup. Serve while hot.

Ingredients:

  • 1 and ½ cups (188g) all-purpose flour (spoon & leveled)
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (230g; 2 sticks) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 3 large eggs, at room temperature
  • ¼ cup (60g) sour cream, at room temperature
  • 3 Tablespoons (45ml) freshly squeezed lemon juice (about 1 lemon)
  • zest of 1 lemon
  • 1 teaspoon pure vanilla extract

Icing:

  • 1 cup (120g) confectioners’ sugar, sifted
  • 1 and ½ Tablespoons (22ml) lemon juice
  • 1 Tablespoon (15ml) heavy cream or milk (heavy cream produces a thick icing as pictured)

Directions:

  1. Lower the oven rack to the lower third position and preheat the oven to 350°F (177°C). Grease a 9×5 inch loaf pan.
  2. Make the cake: Whisk the flour, baking powder, and salt together in a large bowl. Set aside.
  3. With a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on high speed in a large bowl until smooth and creamy, about 1 minute. Add the granulated sugar and beat on high speed for 2 minutes until creamed. Scrape down the sides and up the bottom of the bowl as needed. With the mixer running on low speed, add the eggs one at a time. Once the last egg is completely mixed in, stop the mixer. Add the sour cream, lemon juice, lemon zest, and vanilla extract, then beat on medium speed until combined. Scrape down the sides and up the bottom of the bowl as needed. The mixture may look curdled as a result of the varying textures combining. This is normal and the batter will come together when you add the dry ingredients in the next step.
  4. With the mixer running on low speed, slowly add the dry ingredients just until combined. If needed, run a whisk through the batter a few times to rid any large lumps. Avoid over-mixing. Batter is thick.
  5. Spoon/spread the batter into prepared loaf pan and bake for 45-60 minutes, tenting the cake with aluminum foil halfway through baking to prevent the top from over-browning. Pound cakes are dense and take awhile to bake in the oven. Baking times vary, so keep an eye on yours and don’t be alarmed if yours is taking longer. The cake is done when a toothpick inserted in the center comes out *mostly* clean. A couple moist crumbs are OK.
  6. Remove the cake from the oven and place on a wire rack. Allow cake to cool in the pan on the wire rack for 1 hour, then carefully remove the slightly warm cake from the pan. Let it continue cooling on a wire rack or on a serving plate/platter. You can add the icing while the cake is still warm or wait for it to cool.
  7. Make the icing: Whisk all of the icing ingredients together and pour over cake. Serve immediately or wait until the cake cools completely, which promises neater slices.
  8. Cover and store leftover cake for up to 3 days at room temperature or up to 1 week in the refrigerator.

This fragrant and moist Herb and Cheese Loaf makes an excellent and easy-to-pack picnic if you want to make the most of these sunny Spring days. It is also very nice at dinner, with a glass of chilled Sauv BlancorChardie. And it freezes well, so you can cut it into slices and store a couple of them per bag, and you have a lunch, dinner or picnic ready whenever you feel like it! Happy Wednesday!

Ingredients (makes 1 large loaf):

  • ½ tablespoon olive oil
  • 2 cups plain flour
  • 1 teaspoon dried oregano
  • ½ teaspoon dried rosemary
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Parmesan
  • Mature English Cheddar
  • 3 large eggs
  • 1/3 cup milk
  • 1/3 cup sour cream
  • 1 tablespoon Chili Oil
  • 60 grams/2 ounces Feta cheese

Preheat oven to 165°C/330°F. Lightly grease a loaf pan with olive oil. Line with baking paper; set aside.

In a medium bowl, combine flour,oregano,rosemarybaking powderandsalt.

Grate in about 1/3 cup Parmesan and 1/3 cupCheddar; give a good stir. Dig a well in the middle of the flour mixture, and break in the eggs. Add milk,sour cream andChili Oil, and stir well, until just blended.

Crumble in Feta cheese and fold gentlyinto the batter, until well-distributed. Spoon batterinto prepared loaf pan.

Bake in the middle of the hot oven, 40 minutes at 165°C/330°F, until risen, a nice golden color, and a toothpick inserted in the centre of loaf comes out clean. Remove from the oven, and let cool. Remove from pan.

ServeHerb and Cheese Loaf warm or cold with cherry tomatoes,Mesclun orlettuce.
