Spicy chicken salad with grilled eggplant slices and arugula, with fresh mango slices. This is a great snack meal. Use a knife and fork to eat. Boom. (traduccion abajo)

Approx macros with 5oz chicken breast: 263 calories, 39g protein, 11g carbs, 8g fat (to reduce calories, use less chicken and remove goat cheese)

Recipe: (1) In a food processor, blend cooked chicken breast. Add garlic and onion powder. (2) In a bowl, add blended chicken, 1 large tbsp of nonfat Greek yogurt, 1oz goat cheese, diced bell pepper, black pepper, cayenne pepper and red onion. Season with paprika and Mrs. Dash Southwest Chipotle seasoning. Mix. (3) Lightly spray a skillet with olive oil and set the skillet on medium high heat. Add eggplant slices or wedges and sear the sides.

(2) En un bol, añadir el pollo mezclado, 1 grande cucharada de yogur griego sin grasa, 1 oz queso de cabra, pimienta cortado en cubitos y la cebolla roja. Sazonar con pimiento negro, pimienta de cayena, pimentón y Mrs. Dash suroeste condimento Chipotle. Mezclar. (3) Rociar una sartén con aceite de oliva y poner el sartén a fuego medio-alto. Añadir las rodajas o cuñas de berenjena y dorar los lados.
