Saturday Dinner at Park Restaurant & Bar. The muscles were with fresh sage and it was a great flavor. Duck spring rolls were okay, and we went there for the famous patty melt but ended up ordering a ram meat pie. The pie was not very special but the corn bread on the side was amazing! It tasted like more pudding than a bread and I thought it could be a dessert, mmmm. 

土曜日の晩ごはん、パークレストラン&バー。 ムール貝はフレッシュセージが使ってあり、とっても爽やかなお味、スープも濃くなくてゴクゴク飲めそうでした(実際貝殻使って飲みました)。ダック春巻きはまぁまぁ、そしてパティメルトを食べようと行ったのに、今日のおススメのラムミートパイをオーダー。パイはそれほど特別ではなかったけど、サイドのコーンブレッドが激ウマでした。パンというよりプリンみたい、デザートにボール一杯ただ行きたいくらい美味しかったです。次回行ったときはこのコーンブレッド、おねだりしたいと思います。

ignore my dogs puppy eyes in the background.. she must have wanted these spring rolls as much as i did but seriously these veggie “egg” rolls from whole foods were delish. I would recommend popping them in your toaster instead of microwaving them like suggested, as they will actually turn out crispy this way.

so today I accidentally ate some bread with egg in it it was in my school dining hall, and they usually have signs saying what allergens the foods contain. however, on this sign it didn’t say that the bread contained egg so I ate some. my friend was talking to the lunch lady and she was the one who told her that the bread actually does contain egg. by the time my friend let me know, I had already eaten quite a few pieces. obviously it was extremely frustrating for me, once I realized I had eaten something that wasn’t vegan, but I just need to realize that veganism isn’t about perfection and to just take this as a learning opportunity to always be more careful and double check with my school in the future

Popiah! Chinese fresh spring rolls. The wonderful thing about this is that you can have a Popiah party at home. A big, noisy group gathered around the dinner table; talking, laughing, assembling their individual popiahs; inspecting each other’s to see how much can be stuffed into one roll without the skin bursting… Pictured here is a shop-bought one, but also damn good. #springrolls #springroll #popiah (at Dunman Food Centre)

Healthy Vietnamese Springrolls

(Recipe below)

Ingredients:

  • Rice papers (clear spring roll wrappers)
  • Rice vermicelli
  • Lettuce
  • Fresh mint leaves (optional: Coriander, Thai Basil leaver, shredded cucumbers, shredded carrots, pickles, pineapple, chicken, shrimp, tenderloin, etc. you name it!)
  • Fish sauce
  • 3 tablespoons sugar
  • ¼ cup plus 1 tablespoon Asian fish sauce (preferably from Phu Quoc)
  • 2 lemons
  • 2 garlic cloves
  • 2 fresh Thai chiles (2 to 3 inches; preferably red; including seeds), thinly sliced crosswise

Directions:

The dipping sauce: Stir together sugar, lemon juice and fish sauce until sugar is dissolved. Stir in remaining sauce ingredients and your are almost ready to serve. Cut all the vegetables and meat in thin slices to fit in the springrolls.

In the meanwhile fill a pot of boiling water, cook rice vermicelli noodles for 5 minutes, or until tender and cooked through. Drain noodles, rinsing with cold water to remove all starch from noodles.

Assemble the rolls one at a time: wet one rice paper wrapper thoroughly in hot water for a few seconds, shaking off any excess water. Lay the rice paper on a large plate, allowing the paper to sit for one minute to become pliable. Neatly lay down some noodles. On top of the noodles, add torn mint leaves or additional optional ingredients, making sure not to overstuff spring rolls. Fold the the rice paper and pull the edge of the wrapper inwards and continue rolling until you reach the end of the wrapper furthest from you. Repeat with the remaining wrappers and filling. Serve immediately or at room temperature with the dipping sauce.
