Cold Cuts Day -  Call them lunch meats, deli meats, sandwich meats, or cold cuts. Some like them thick, while others stack them a mile high. Others still just like them with cheese and crackers. However you like them, National Cold Cuts Day was made for sandwich and snack makers.

Hospitalist Day -  Hospitalists manage patient care throughout their inpatient stay and have been proven to reduce readmissions while also serving as leaders in quality improvement and patient safety.

I Want You To Be Happy Day -  Encourages us to do something that makes others happy. It also asks us to see others’ happiness from their point of view. Putting a smile on someone’s face tends to put one on ours, too.

Mulled Wine Day - Mulled spirits are wine and liquors that have been heated and spiced. Mulled wine is usually made with red wine with various spices, fruits and sometimes slightly sweetened with honey.  Popular blends include cinnamon, nutmeg, citrus, vanilla, anise, cloves, raisins, or pears. Wine was first recorded as spiced and heated in First Century Rome. The combination of heated spirits and spices is a warm welcome on a cold winter’s day and has long been considered a balm against illness during this time of year.

National Anthem Day -  Commemorates the day the United States adopted “The Star-Spangled Banner” as its National Anthem. Written by Francis Scott Key, the “Star-Spangled Banner” became the National Anthem in 1931.

Soup It Forward Day -  When making one of your favorite soups at home, Soup it Forward. Deliver a healing pot of your delicious chicken noodle or split pea to a family or friend in need. Perhaps they have been ill or down on their luck. Whatever the situation, a little of your home cooking and a visit will be a nice change.

World Hearing Day - Raises awareness about hearing loss prevention. It’s also a day that promotes ear and hearing care.According to the World Health Organization, 466 million people worldwide, or 5 percent of the world’s population, are affected by hearing loss. Thirty-four million of those affected by hearing loss are children. If we do nothing, over 900 million people will have disabling hearing loss by 2050. 

World Wildlife Day - A celebration to all life on our planet. The yearly event is regarded as the most important, raising awareness about threatened and endangered plants and animals.

Hello again, friends! It’s Winter time where I am and it’s a wonderful time to share my spiced wine/mulled wine recipe that I personally love to use. Let’s get into it:

Ingredients:

The Wine:
2 bottles of red wine, either a Cabernet Sauvignon or a Merlot (I adore the Apothic brand wines. I use Apothic Red a lot.)

The Spices:
• Cinnamon
• Clove
• Star Anise
• Cardamom

The Fruit:
• Grapefruit
• Lemon
• Orange

The Additional:
• Honey

**I will say this now that I’ve used both fresh and dried fruit, and think both ways comes out lovely. Use whatever you have on hand and in whatever amounts you prefer.**

Directions:
• Pour the bottles of wine into a pot large enough to hold them both and turn the heat of the stove on low.
• As it begins to warm (I dip my finger in to test, no judgement please), begin adding the spices in amounts that you like.
- For 2 bottles of wine, I use anywhere from 3-4 cinnamon sticks, a small handful of cloves, 3-5 star anise and a small handful of cardamom.
• When the mixture begins to come to a boil/simmer, add in the fruit. I prefer sliced circles but wedges certainly work as well!
• Cover and leave for about 20 minutes, stirring occasionally.
• Ladle into a cup and enjoy, sweetened with honey to taste!

**Note:
• Premade/bought mulling spice blends work perfectly well for this as well.

Ingredients

• 1 bottle of an inexpensive sweet red wine (For a non-alcoholic alternative, substitute grape juice for wine — the amount of sugar may be reduced or eliminated entirely during cooking — and add one or two teaspoons of red wine vinegar for a bit of tartness.)
• 1 - 2 cups honey
• 1½ tablespoons Poudre Douce (“Sweet Powder,” a common medieval spice mix containing cinnamon, ground ginger, and nutmeg)
• A handful each of dried cranberries, raisins, and almonds

Directions

• In a cooking pot, bring the wine and honey to a simmer, being sure to skim off the scum as it rises to the top. Taste for sweetness; add more honey as necessary. Stir in spices, nuts, and dried fruits, and continue to simmer for at least 20 minutes, stirring occasionally.

• Remove from heat and allow to rest until the spice mixture creates a thick residue that settles to the bottom of the pot.   

• Using a ladle, serve into individual mugs or other heat-safe vessels. Try not to disturb the layer of spices at the bottom of the pot.


*In the late medieval period, hippocras, or mulled wine, became an important part of every banquet. It was usually served at the last course, the desserte, along with cheese, candied fruits and light cakes. It was an extremely well-liked, highly prized beverage and was prescribed by physicians to aid in digestion.

Magickal Mulled Wine - Not just for Winter!

Often used as a tipple around the Yuletide season mulled wine was believed to help avoid sickness and promote health especially during the the winter months.

This particular recipe was passed to me by my sister around 9 years ago and it’s a firm favourite amongst my family and extended family.

It makes an excellent warming drink regardless to the season (I live in the UK, it’s cold and wet frequently) as well as a tasty offering.

Alternatively it can be served chilled topped up with fresh orange or lemonade in a tall glass as a summer drink. Think of it as a super spiced sangria!

Ingredients

2 Clementine’s (or two small oranges)

1 Lemon

1 Lime

200g Caster Sugar

6 Whole Cloves

1 Cinnamon Stick

3 Fresh Bay Leaves

1 Nutmeg

1 Vanilla Pod (halved length ways)

2 Star Anise

2 Bottles of Red Wine

Method

• Remove the peel from the clementine’s, lemon and lime and set aside.

• Put the sugar in a large pan on a medium heat, add the peel.

• Squeeze in the juice from the clementine’s (tip: do this over a strainer to avoid too much pith or pips)

• Add the cloves, cinnamon stick, bay leaves, vanilla pod and 10-12 gratings from the nutmeg.

• Pour in enough wine to cover the sugar and let simmer.

• When the sugar is fully dissolved, boil for approx. 5 mins or until it forms a thin syrup/cordial consistency.

•Reduce the heat and add in the star anise along with the rest of the wine.

• Leave on a gentle heat for 5 mins.

• Serve and enjoy!
