Last four days of school lunch. Today was a very fatty pork dish with Hawaiian salad (aka, cucumbers and pineapple). Then there was beans and hijiki. Finally, white rice.

Salad repeats again. I tend to do this when making my own meals. Get a bunch and then eat the same thing for days in a row. Friday saw a repeat of the potato salad and lotus root salad. Though there was a new noodle salad along with it, glass noodles. Quite good. I also had cheese stuffed meatballs as well.

On Monday I had curry. I made a ridiculous amount of curry on Thursday. Enough for a week of lunches. So this will be the same lunch I have all week.

Once again, sides were the same. From the same batch. However on Wednesday and Thursday I went with sandwiches. I had egg salad on Wednesday and tuna on Thursday. Overall, still pretty good!!

We’re back at school baby (whether I think that’s a good idea or not). The stupid virus has gotten in the way of this little project but we will persist! For the month of May I’m bringing my own lunch but I purchased most of it at the supermarket. Karaage, tofu and spinach salad, potato salad and lotus root salad. Finally white rice.

As you can see on the bottom photo, Tuesday’s lunch was basically identical. However I added on some furikake to the rice.

After nearly 5 months, it is done!
This pattern uses the crochet waistcoat stitch, or the knit(look) stitch which I struggled with the first time I tried, 3 years ago. This needs a lot of tension control!

I used all 12ply yarns, with a hamanaka bag base, and a 4.5mm hook.
Pattern from an applemints book (see last picture).

As you’d notice, I’m missing the chilli rows. My bag would’ve been too tall! So we stopped after the lotus root. Difference of yarn type. I also added the button flap closure and did a lil extra in the base round to reinforce.

A bit of math was needed as my base didn’t have the exact number of holes for the pattern. Frogged a few times but once I got the sizing right with the repeat pattern, it was all go - at a really slow pace and really long breaks in-between.

Grateful to the (free!) stitchfiddle program where I could chart the diagram in colour and track my rows.

Here’s another recipe I found in the 10 minute cooking book I’ve been using.

Carrot, chicken, and lotus root saute with sesame:

250g boneless chicken, chopped into bite-sized pieces
1 small lotus root (about 200g), peeled and coarsely chopped
1 carrot, peeled and coarsely chopped
1 tsp white sesame seeds
1 tsp salad oil
2 Tbsps sake
½ C water
2 Tbsps mirin
1 tsp sugar
2 Tbsps soy sauce

Heat oil in frying pan, then add chicken and saute until browned. Add vegetables and saute together.

Once the oil has coated everything, add sake, water, mirin, sugar, and soy sauce. Bring to a simmer, then cover with a lid and cook on low heat for 5 to 6 min.

Remove lid, and saute while stirring until most of the liquid has evaporated. Mix in sesame seeds and serve.

This was SO TASTY, and really really easy!
