Fluffy Vegan Cinnamon Rolls

1. Warm up the water until it is between 100°-115° F and add 1 teaspoon of sugar, and all the yeast. Stir and let sit for a few minutes. Yeast should activate.

2. Add the coconut oil, salt, 2 cups of flour, remaining coconut sugar, and stir until the mixture comes together. Add additional flour in ½ cup increments until mixture pulls away from the sides of the bowl. Turn dough out onto floured surface and knead a few times until you form a smooth ball.

3. Combine the cinnamon + coconut sugar mixture. Dust the counter with more flour, and turn the dough ball out onto the floured surface.

4. Make dough rectangle about 12x16 inches. Spread melted coconut oil over the rolled out dough.

5. Sprinkle oil with cinnamon and coconut sugar mixture.

6. Starting at the long end closes to you, begin to (gently but tightly) roll the dough up into a log. You should get around 12 rolls.

7. Set somewhere warm for about 40 minutes. After 40 min, put in preheat oven to 350°F. Rolls should puff up and double in size. Bake them for about 15 minutes.

Porridge with banana, strawberries, cashew butter and dark chocolate ❤️


Ingredients:

- 50g rolled oats

- 200ml oat milk

- 1 tbsp Erythrit

- a few flave drops

- 2 bananas

- handful of raspberries

- 1 tbsp chia seeds

- 50ml orange juice

- 100ml oat milk

Ingredients:

- 70g spelt flour

- 20g coconut flour

- 10g cornstarch

- 2 tbsp Erythrit

- 1 tsp baking powder

- vanilla extract

- 150ml oat milk

Chia pudding with cherries, almond butter, dark chocolate and golden oreos


Recipe:

- 30g chia seeds

- 150g soy yogurt

- 100g oat milk

- 4 tbsp Erythrit

➛ Put all ingredients into a bowl, stirr well and refrigerate overnight

Fluffy pancakes with raspberries, chocolate spread and maple syrup


Recipe (5-6 pancakes):

- 80g wheat flour

- 2 tbsp Erythrit

- 2 tsp baking powder

- pinch of salt

- 120g plantbased milk

➡️ In a bowl, combine all ingredients with a whisk, but don’t overmix. Set aside for 5 minutes.

In the meantime heat a pan over medium heat and grease with a bit of coconut oil.

When hot, pour in about 2 tbsp of batter for each pancake. Flip over once the surface gets bubbly and let cook for 1 more minute.

Chocolate porridge with plantbased skyr, raspberries and Oreo cookies ❤️


Ingredients:

- 50g rolled oats

- 200ml oat milk

- 1 tbsp Erythrit

- 1 tbsp cocoa powder

- maple syrup as much as you like

Vanilla protein waffles with stracciatella yogurt (made with luve), strawberries, dark chocolate and chocolate sauce (biovegan)


Ingredients (4 waffles):

- 110g oat flour

- 40g vanilla protein powder

- 175g plantbased milk

- 125g sparkling mineral water

- 1 tsp baking powder

Apple fritter pancakes

With chocolate spread, maple syrup and more apple


Recipe:

- 100g oat flour (finely blended rolled oats)

- 175g oat milk (or other plantbased milk)

- 75g apple sauce

- 1 tsp cinnamon

- 1 tsp baking powder

- 4-5 vanilla flave drops

- 1 big apple


➡️ Combine all ingredients (except the apple) in a bowl with a whisk.

Peel the apple, cut it into thin slices and remove the core.

Place a non-stick pan over medium-high heat and add a little bit of coconut oil. Once hot, pour 1-2 tbsp of the dough into the pan, press in an apple slice and coat with a little more dough. Cook for 1-2 minutes per side.

Here is my recipe which does include healthy fats (cue audible gasp from the hclf vegans )

3 overripe frozen bananas
1-2 tsp vanilla extract
2- tbs- ¼ cup plant milk (I used almond) add a little at a time just to loosen the mix in the blender
1-3 tbsp peanut butter ( I think you could use pb2 but I haven’t tried. Remember that some healthy plant fat in your diet is good for you and this boosts the protein for those who worry about that kinda thing.

Stick everything in the blender and whizz until smooth and delicious

I like to top with milled flaxseed to get those good ol’ omega 3s

I have a cup of coffee strictly for the B12 in the almond milk of course
