VEGAN SUPERFOOD BLUEBERRY MUFFINS
These muffins are dairy free, clean and use whole, minimally processed ingredients to maximize nutrient density Recipe ⬇️⬇️⬇️
Blended together:
2.5c rolled oats
1 scoop @vega_team vanilla protein powder
1 spoonful @manitobaharvest harvest hempseeds
Pinch of Himalayan sea salt
Spoonful of cinnamon
*you can just use oat flour (or sub almond, coconut flour, etc.) if you don’t want to blend your oats
Added dry mix to a bowl with:
1 mashed banana
1-1.5c almond milk
3 tbsp Justin’s almond butter
1 tbsp vanilla extract
1 tbsp @navitasorganics liquid coconut oil
3-4+c blueberries (I ❤️ my berries)
1 green apple chopped
Flax/chia ‘egg’ (mix 2 tbsp ground flax, 2 tbsp @salbachia chiaseeds and ~3/4c water or nut milk + let soak)
Bake at 350F for ~30 mins
Topped with @peeledsnacks dried apples, @go_raw watermelon seeds and @superseedzofficial cinnamon pumpkin seeds
