Love food, love breakfast
This is one of my favourite throw together meals, it’s so easy, and soooo tasty.
Boils some chopped spuds while you’re making the veggie filling, mash them up with some nuttelex and a splash of soy (or chosen non dairy milk) and set them aside.
Next chop up a leek, set it softening in some coconut oil. Add a finely chopped carrot, zucchini and a few mushrooms. Let them cook for a couple of minutes then add this pre made Leggos stir through tomato, olive and chilli sauce, fill 1/3 of the sauce jar with water, give it a shake and tip the water in the pan. Let it cook until liquid is evaporated and veggies are softened.
Put the veggies in a pie dish, top with the mash, sprinkle with some grated notza or cheezly (optional). Bake til browned. DEVOUR!!!
