Mum asked me to settle my own dinner outside so I bought back McDonald’sHokkaido Salmon Feast (S$10.90). The set came with a Hokkaido Salmon Burger, medium Fries, Chocolate Pie and a regular Jasmine Green Tea drink.

If I had to choose between this seasonal Hokkaido Salmon Burger and the Filet-O-Fish, it will definitely be the former. The crispy panko-crusted patty made with Hokkaido salmon is topped with white cabbage, sliced onions and roasted sesame mayonnaise sandwiched between a black and white sesame seeds bun. This is an upgraded version of the classic Filet-O-Fish and a delish one.

For dessert, it is molten Chocolate Pie. The crispy warm pocket is filled with gooey lava of milk chocolate which is rich but not too sweet. When this item was first launched a few years ago in Singapore, it went out of stock in last than a couple of weeks.

Folklore Friday:

Cabbage should be planted on the seventeenth day of March, to insure its heading well.

Seed is one of Nature’s tiny miracles upon which the human race relies for its food and pleasure.

Cabbage seed

Each grain contains the genetic information for growth, development, flowering and fruiting for the preponderant plant life living on this planet. And when provided with adequate oxygen, moisture, warmth, light, physical support and nutrients germination will result in a new generation of a species. These vary from tiny short-lived alpines to the monumental redwood trees growing for centuries on the Pacific west coast of America.   

Humankind has tamed and selected a few plant species for food and decorative purposes.

Seed of these, especially food plants, is an internationally traded commodity. Strict criteria governed by legal treaties apply for the quality and health of agricultural and many horticultural seeds. This ensures that resultant crops are true to type and capable of producing high grade products as claimed by the companies who sell the seed. 

Companies involved in the seed industry place considerable emphasis on ensuring that their products are capable of growing into profitable crops for farmers and growers. Parental seed crops are grown in isolation from farm crops thereby avoiding the potential for genetic cross-contamination. With some very high value seed the parent plants may be grown under protection and pollinated by hand.

Samples of seed are tested under laboratory conditions by qualified seed analysts. Quality tests identify levels of physical contamination, damage which may have resulted in harvesting and cleaning the seed and the proportion of capable of satisfactory germination. There may also be molecular tests which can identify trueness to type. Identifying the healthiness of seed is especially important. The seed coat can carry fungal and bacterial spores which could result in diseased crops. Similarly, some pathogens, including viruses, may be carried internally within seed.

Pests, especially insects, find seed attractive food sources and may be carried with it. Careful analytical testing will identify the presence of these problems in batches of seed. 

The capabilities of seed for producing vigorous plants is particularly important with very high value vegetable and salad crops. Vigour testing is a refined analytical process which tracks the uniformity and speed of germination supplemented with chemical tests determining the robustness of plant cells.  Producers rely on the quality, uniformity and maturity rates of crops such as lettuce, green broccoli or cauliflower so they meet the strict delivery schedules set by supermarkets. Financial penalties are imposed for failures in the supply chain. 

Biology’s seemingly inert tiny seed grains are essential ingredients of humankind’s existence!

Do not buy a cabbage unless you have one of the following:

1. A recipe that uses a whole cabbage

2. 200 recipes that use some cabbage

3. A desire to waste an entire half cabbage

4. A desire to aid your local cabbage merchant who’s struggling financially because so much of their crop was destroyed in a series of bizarre incidents involving a twelve-year-old martial artist.

This blog will likely no longer be active after July 15th. I am returning to my home country and therefore will no longer be experiencing Japanese food. I doubt people will be interested in quarantine food or plain Canadian food.

Today I went for lunch with a former English teacher to a lovely little restaurant in Shimanto. We had the soup curry with mixed rice and a salad. It was actually a little spicy.

Second to last lunch. Can you see the massive difference between how my school serves rice vs how my friend’s school gives her rice? So much less. It was barley rice today. There was also nori to eat along with it. There was a clear consomme soup with bacon, noodles and veggies. The salad was a pickled cabbage and cucumber salad. Finally the tofu was covered in tuna and cheese and baked. Pretty damn good.

I’m overjoyed with this meal. Kibinago, silver-striped round herring, is one of my favourite lunches. It’s one of the things where I had never expected I’d like whole fish. But it’s so good.

Then an egg soup, cucumber salad and rice.

Pretty good lunch on wednesday. Salmon (with a few bones) a nice wilted pickled salad. A very hearty miso soup with lots of tofu. A slice of frozen pineapple for dessert. The rice was ‘seikhan’, or red bean rice. Sticky and delicious.

Today was yummy. A tofu steak with a ground meat sauce. There was a ton of hijiki salad. A lot of it! Then barley rice. The other seaweed salad was not the greatest, just soggy.

Request lunch day #1! Because schools were closed for two months we missed out on a lot of request lunches. So Friday was the first request lunch of the month. Typical for them we had karaage and wakame seaweed rice. The soup was new though, a nice consomme soup. Very light. The side salad was a carrot one with egg. A chocolate pudding for dessert.
