LAVENDER-ROSEMARY-LEMON SHORTBREAD

These little cookies may not look like much, but they’re seriously some of the best ones I ever had. Improvised the recipe but here goes:

Ingredients

- 4,5 dl / 2 cups flour
- 200 g dairyfree butter/margarine/other veggie fat
- 0,5 dl / 0,25 cups white sugar
- 0,5 dl / 0,25 cups unrefined sugar
- Zest from organic lemon
- Dried lavender
- Dried rosemary
- A little maple syrup

Instructions

Mix all ingredients except the syrup in a food processor until it’s one big lump of dough.

Roll the dough to a cylinder shape (see pics), cover in plastic and let it rest in the fridge for half an hour.

Turn on the oven to 175 degrees C.

Cut the dough cylinder into 0,5 cm thick discs (well obv you can make them whatever shape you like). Spread them out evenly on a baking tray with some space in between.

Brush the cookies with a little syrup, sprinkle some rosemary on them, and bake in the middle of the oven for like… 8 minutes (keep an eye on them, it’ll differ depending on the oven etc).

Now you’ll never want to eat anything else ever again!

Fire Cider Spell for Winter Protection

Last year I set an intention to grow as many of my own ingredients as possible for a big batch of fire cider to keep me warm and healthy this winter. I had no idea how glad I’d be that I did! With COVID ramping up (ugh) in the US, I’m glad to have an enchanted health boosting tonic to keep my immune system ready for anything. This batch came out powerful and delicious and brimming with magickal intent. A teaspoon of this each morning warms me up and makes me feel safe, strong, and ready to take on anything. Allow me to share my recipe with you <3

Fire Cider Spell

  • Quart jar
  • Apple cider vinegar (about 20 oz)
  • Several Cayennes (however many you like) chopped
  • 1 small-medium red onion, minced
  • 3 large garlic cloves, grated.
  • 2” knob of ginger, grated
  • 2 tablespoons horseradish, grated (if you can find it. If not, no big deal!)
  • 2 tablespoons fresh turmeric (if you can’t find any, you can add a couple shakes of turmeric powder, or just skip it!)
  • 1 cinnamon stick (cassia for heat or ceylon for flavor)
  • 2 star anise
  • 1 tablespoon of rosemary needles
  • 1 tablespoon of thyme leaves
  • Local honey, to taste
  1. Firstly, enchant your botanical ingredients (separately) for protection and health. Create a short healing and protection mantra and think it to yourself while imagining a white light surrounding the herb you are enchanting. Usually 30 seconds is right for me, but do what is right for you. After they’ve all been sufficiently enchanted, add them to the quart jar.
  2. Cover the botanical ingredients with apple cider vinegar, leaving a bit of head room so you will be able to adequately shake it up in the coming days. Screw the lid on tight and shake. Write the date on the jar.
  3. Set the jar in a dark-ish place along with a clear quartz crystal for 6 weeks. Shake every day while thinking or reciting your healing and protection manta.
  4. After 6 weeks, strain out the solids. Add honey to taste (mostly to counter the spiciness,) and then store it in the fridge for the best longevity, although it is also shelf stable. Take a teaspoon up to a half a shot of it each morning as you are getting ready for the day :)

Need to try this this year.

Kitchen Witchery - Lavender Earl Grey Cookies

The Spring/ Vernal equinox is coming up!

I don’t have a lot of time to set up a party like I usually do, so instead I plan on making these cookies and taking them to my friends and family on (or near) the equinox! Of course I plan on offering some to the Deities and house spirits as well.

An ornate plate of freshly baked shortbread cookies

Find out more about the spring equinox here.

Here’s what you’ll need:

  • 10 tbsp unsalted butter, at room temperature
  • ½ cup powdered sugar
  • ½ teaspoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon kosher salt optional
  • ½ tbsp Lavender syrup
  • ½ tbsp earl grey tea

Here’s what you do:

  1. In a stand mixer, beat the butter, lavender syrup and vanilla extract until creamed.
  2. Add the sugar and salt and mix until combined.
  3. Scrape the sides of the bowl, getting the mixture back into the center, and add flour while beating on low.
  4. Add the earl grey, scrape the bowl again and mix until combined. It’s will be crumbly, not a cohesive dough. This is good!
  5. Take out the crumbly dough and smush the crumbly bits together to shape the dough either into a rectangular prism or cylinder , wrap in plastic and chill for at least an hour, or until firm.
  6. Preheat the oven to 350F (177C).
  7. Cut ½ inch thick slices of the cookie dough. You’ll have little rectangles or circles depending on how you shaped the dough.
  8. Place these sliced cookies onto a baking sheet lined with parchment paper, making sure they are at least an inch apart.
  9. Create a pattern on top if you’d like.
  10. Bake for 10-15 minutes, making sure to rotate the baking sheet in the oven halfway through.
  11. Move the cookies to a cooling tray if available, otherwise you can allow them to cool on the pan.

a blue and white teacup sits in front of a window while golden sunlight peeks through, two shortbread cookies adorn the side of the plate next to the teacup, one has a bite taken out of it

You can change the additions to this as you like, maybe make some chai shortbread cookies or another tea! Maybe matcha? The possibilities are endless!

Tips:

  • Add a tsp of lemon juice instead of earl grey to make a great springtime desert!
  • Use a toothpick, fork, or skewer to make designs on the top of the cookies.
  • Use Lady Grey tea instead of earl grey to create Lady Lavender cookies!
  • Serve with black tea (perhaps earl grey!)
