As the autumn comes to a close, and the cold of winter sets in, I figured it’d be a great time to make a simple savoury treat from medieval Georgian cuisine - stuffed apples! Though savoury stuffed apples are commonly found in the Caucasus region, this isn’t exclusive to Georgia! Armenia, and parts of north-western Iran, western Turkey, and Azerbaijan also have regional variants of this dish!

Ingredients (for 4 servings)
4 large tart cooking apples
honey
ground cinnamon
ground nutmeg
water
1 cup rice
butter
Method
1 - Prepare Apples
To begin with, we need to prepare our apples. Do this by slicing the top off of about 4 large apples, before carving out the middle - leave about a finger’s width of a wall.
Drizzle some honey in here, and sprinkle a little ground cinnamon inside. Honey was used in the civilisations of the Caucasus for millennia, and was an important part of many people’s diets in the medieval period.
2 - Prepare Filling
Next, pour a cup of rice into a bowl, and pour some water over this. Rinse the grains until the water runs clear. When it’s cleaned, keep the grains just about submerged, and bring the pot to a boil. Cook your rice for a few minutes until they fluff up. When they’re done, let them cool down a bit, before mixing in a handful of raisins or sultanas, along with some freshly-grated cinnamon, and some freshly grated nutmeg, or mace.
Both of these spices were commonly found in the kitchens of the region in the medieval period, thanks to Georgia’s proximity to the silk road and spice trade.
3 - Assemble Stuffed Apples
Take your hollowed apples, and fill them to the brink with your rice stuffing. Place a dollop of butter over this, before placing the lids of your apples back on top.
Place your apples onto a deep tray, and pour about a cup of water into this. If you want, you could add some more aromatics or spices in here - such as mint, rosemary, or cloves! Then put the tray into an oven preheated to 350F or 175C for about a half an hour, or until the apples puff up and turn golden.
Take your apples out, and serve up alongside some roast meat and vegetables! Spoon over some of the baking liquid, to rehydrate the rice a little too!
The apples are quite tart, but with a deliciously sweet undertone. The flesh is melt-in-your-mouth, and pairs very well with the texture of the fluffy rice. This pairs really well with roast lamb and pork, and is a fantastic (and easy) side-dish for any feast you’re preparing for!
April 2 1921, Yerevan–TheSoviets took over most of Armenia in December 1920, seeming a better alternative to the approaching Turkish armies. Soviet control was short-lived, after the Soviets quickly alienated much of the population, the Dashnaks were able to retake Yerevan and much of the surrounding area in mid-February. After conquering Georgia and negotiating a peace treaty with the Turks in March, the Soviets were once again able to concentrate on Armenia, launching an offensive on March 24 and retaking Yerevan on April 2. The Dashnaks fell back into the mountains in the Syunik province, where they continued to fight against the Soviets until July.

March 16 1921, Moscow–TheSoviet invasion of Georgia brought Soviet Russia into direct contact with Turkey, which soon thereafter invaded the country from the south. The Soviets had already repudiated the Treaty of Brest-Litovsk that had given up large areas to the Ottoman Empire. Kemal’s government in Ankara wanted to keep these gains, but was also diplomatically isolated and was more worried about the Allies occupying Constantinople and Smyrna.
On March 16, representatives from Kemal’s government and the Soviets signed a treaty in Moscow. Turkey got to keep most of the gains from Brest-Litovsk, with the exception of Batum [Batumi], while Turkey recognized the Soviet republics in Armenia, Azerbaijan, and Georgia. Both sides repudiated Brest-Litovsk and Sèvres, and the question of navigation of the Straits was deferred to a later time. Residents of the territories Russia gave up in Brest-Litovsk were to have the right to leave Turkey with their property intact. Azerbaijan’s control over the Nakhchivan exclave, which continues to this day, was confirmed by both sides.
The treaty brought an end to Turkey’s adventures in the Caucasus (for many decades), and the borders established by the treaty remain largely unchanged to this day. The last organized Georgian resistance to the Soviet invasion collapsed two days after the treaty, leaving the Soviets free to concentrate on the Dashnaks in Armenia.

У меня такая страсть вообще ко всему национальному. Больше всего, конечно, мне понравился платок. Первоначально этот национальный платок- ГУЛЬМЕНДИ был обязательным атрибутом женщин и девушек даргинского селения Губден. Позже его стали носить повсеместно. И даже я недавно приобрела себе такой. А пока Любуемся фоточками! ))
Незнание родного языка на сегодняшний день стало такой нормой, что когда люди узнают о том, что я прекрасно говорю, пишу и читаю по-лезгински, то угадываю в их лицах благородное негодование. “Как так? Девушка, выросшая в городе, в "светском” обществе,- как у нас принято говорить, знает родной язык? Что за средневековая дикость?“
Однако, живя в этом самом светском обществе, не стоит забывать о том, что республика у нас все же мусульманская, где с самого детства нам прививали основы Ислама, рассказывали об обычаях и адатах, которые, к сожалению, стали забываться в современном Дагестане. Вместе с тем, родители незамедлительно обучали детей родному языку. Кто-то отправлял их с ранних лет в селение к бабушкам и дедушкам, а кого-то обучали этому в школе.
Я могу считать, что мне в этом плане поистине повезло. Помню, моя мама, еще до того, как я пошла в школу, разучивала со мной слова и стихи на родном языке. А, выучив очередное стихотворение, я тут же прибегала к папе, и, весело щебеча, рассказывала его. Полученные знания я закрепляла в селе, общаясь с многочисленными родственниками исключительно на лезгинском языке. Ну, а в школе уже подтянула письмо и грамматику.
Мне было радостно. Я была горда. Тогда по-своему, по-детски, я ощущала себя частью целого народа. Так что, национальное самосознание мое формировалось ещё с ранних лет.
Однако на сегодняшний день картина в республике совершенно иная.
Сегодня в Дагестане принято "всё понимать, но не уметь говорить на родном языке.”
Преподносится это, как нечто великое. И тембр голоса горянки (горца) при этом должен звучать очень гордо, аки, повелитель Вселенной.
Многие из Вас, наверняка, посчитают, что я утрирую, если бы не одна смехотворная деталь. Для интереса я поспрашивала среди знакомых и друзей, возраст которых приближен к моему (то есть от 19 до 35 лет) и выяснилось, что из двадцати человек родной язык знают лишь пятеро, да и то, с натяжечкой. Так что, выводы мои вполне себе логичны.
Признаюсь честно, еще несколько лет назад меня не сильно волновали подобные вопросы. Но с возрастом любовь к Родине заставила меня всерьез задуматься о многих вещах.
Меня волнует, что через каких-нибудь десять лет в моей республике не будет места ни культуре, ни традициям, ни родным языкам, которые мы не учим из принципа, усердно “притворяясь” русскими. И это явится первой прямой пощёчиной нам.
Дагестан, как известно, — самый многонациональный регион России. Здесь проживает более 30 коренных народностей. Ведь не зря Дагестан еще называют «Горой языков». И эта величественная гора начинает мало-помалу рассыпаться, благодаря ложным понятиям и идеалам.
Родной язык является главным признаком, позволяющим определить, к какому этносу относится человек. А без его знания мы теряем своё лицо и «плаваем» в культуре другого народа.
Наше вечное желание причислять себя к светским обществам и показывать, что мы выше всяких там «культур-мультур» и привело к тому, что девушки стали перенимать тупую манеру общения бикс с ТНТ, а парни—быдла с намёком на крутость.
Безликие и абсолютно оторванные от настоящих ценностей, все стремятся покорять новые вершины светской жизни. Ведь по их скромному разумению это куда важнее изучения нашей богатейшей культуры.
Дагестан по своей аутентичности настолько прекрасен, что его невозможно не любить.
И я верю, что однажды люди пробудятся ото сна и вновь обратятся к своим истокам—начнут отстраивать свои разрушенные дома в заброшенных селениях, следовать своей культуре и традициям, учить языки и гордо нести свою историю.
