This is not a school lunch. I had to go to Kochi City with a friend for visa purposes. So we decided to stop for lunch at a nice cafe offering a set meal for lunch. The daily menu for this lunch changes. It was 880 yen for this meal. 

It featured miso soup and white rice along with some side dishes (a leafy pickled salad, some sort of stem pickled with bonito flakes and then daikon thath ad been boiled with konyaku. There was fried shrimp with tartar sauce, chicken karaage and also steak! Finally some pickled daikon and cucumber.

Another request lunch!! It was karaage again. The side salad was a spinach, peanut and then little baby sardines. There was a nice miso soup and then wakame rice. There was also a chocolate crepe for dessert.

Decent lunch today. Salmon and a salad with Mayo. A gross tomato and then a potato miso soup. Then just white rice. The konatsu fruit was extra.

Good miso soup and rice are my favorite combination!  I am so Japanese, right?

Nourishing miso soup for lunch! Fresh miso dissolved in to hot water with some lemon juice and sesame oil as the base, with broccoli, sweet corn, rice noodles, red cabbage, cashews and nutritional yeast. :D

Miso Soup Ingredients: White and dark miso paste 500ml fish stock Mirin Udon noodles Spring onions S

Miso Soup

Ingredients:

  • White and dark miso paste
  • 500ml fish stock
  • Mirin
  • Udon noodles
  • Spring onions
  • Silken tofu
  • Sliced bamboo shoots

Method:

  • In a pan, bring the fish stock to a gentle boil and reduce to barely simmering. Add the noodles and let cook for 2 minutes.
  • Add 1 tablespoon of dark and 1 of white miso paste.
  • Add 1 table spoon of mirin and stir well until everything has combined.
  • Chop spring onions and silken tofu and add to soup.
  • Add bamboo shoots and leave for a minute to warm through.
