Poached Eggs on Spinach Avocado Cheese Toast with fresh fruit, olives and spring onions…

This was our delicious breakfast yesterday. It looks complicated, but it was easy and fresh. The most complicated part was taking a picture while hungry. 

 I’ve been going to the Farmer’s Market every week, and I’m trying to cook with more fresh, healthy ingredients/ less carbs / less fat. That being said, the vegetable cream cheese toast on the base of this dish is so good. You could just have that with eggs. But adding all sorts of fresh fruits & veggies gives this dish a crunchy flavor explosion, and way more nutrition. I love a delicious bite with the briny Kalamata olives, crispy toast and creamy salty spinach w/ feta and poached egg. Yum. I might have to make this for breakfast again today. Here’s how to make this delicious dish:

Start a pot of water boiling for poached eggs. You could make sunny side up, or any other style of egg if you don’t like poached. I cook the eggs at the end when I’m done with all the other prep.

Wash and saute a big handful of spinach in olive oil with a minced garlic clove, med low heat until fragrant and wilted. Salt and pepper, set aside to stop cooking. Sprinkle with feta cheese.

Slice olives, green onions, avocado, and whatever fruit you have. I used mangoes and blood oranges. Wash and chop cilantro.

By now your water is boiling, so add a splash of vinegar to the pot, use whatever vinegar you have, white, red wine, or whatever. Probably not balsamic, never tried it though. Stir the water in the pot to create a whirlpool, crack the first egg in, add any additional eggs. I do up to three at a time. Once the egg(s) is cooked but yolks are still soft, remove to a paper towel- lined plate with a slotted spoon.

Toast bread, I used sourdough. Spread the toast with vegetable cream cheese or goat cheese, any kind of spreadable cheese or none.

Compose the dish with toast on the bottom, cheese, avocados, wilted spinach,  poached egg, sliced olives, cilantro and onion on top and fresh fruit all around. This would be awesome with hollandaise too. Yum!

For your Big Cosmic Bowl you’ll need:

TAKE:

Pitaya Base:

2 packs pitaya
1 cup frozen strawberries/raspberries
1/2 cup frozen cauliflower
1/2 cup dairy free milk I used almond milk

Charcoal Base:

2 bananas
1 cup of frozen kale
1/8 cup of coconut milk
1 tsp of charcoal

BLEND in a high powered blender or food processor until thick, creamy, and no chunks! Add your favorite toppings and enjoy.

Roast Chicken w. Salsa Verde

For the roasted chicken
  • 1 3-4 lb chicken
  • 1 tbsp kosher salt
  • 1 lemon, thinly sliced and seeded
  • 2 fresh bay leaves
  • 1 small onion, peeled
  • 3 garlic cloves
  • 1 small bunch fresh thyme
For the salsa verde
  • ¼ cup thinly sliced fresh flat-leaf parsley
  • 2 tbsp thinly sliced fresh mint
  • 2 salt-packed anchovy fillets, rinsed and minced
  • 1 garlic clove, minced
  • 1 shallot, minced
  • grated zest and juice of 1 lemon
  • 2 tbsp salt-packed capers, rinsed and chopped
  • ½ tsp crushed red pepper flakes
  • ½ cup extra virgin olive oil
  • kosher salt and freshly ground black pepper

This was our (rainy-day-Harry Potter-Marathon) Lunch Treat!

Margarita Pizza Grilled Cheese!

Ingredients:
Sourdough Bread
8oz fresh Mozzarella
Handful of fresh spinach
1 can fire roasted tomatoes
1 clove garlic
1 tsp olive oil

Directions:
Preheat oven to 350*

Sauce:

While oven is preheating sauté minced garlic cloves. Add Fire roasted tomatoes. A few sprigs of basil and dill and simmer for 5 minutes. Turn burner to low heat and assemble your sandwiches.

Sandwich:

Spread a light coat of olive oil on all sides and slices of bread.

Place a few thick slices of Mozzarella on 2 slices Of bread.

Bake all 4 slices for approximately 7 minutes.

Flip empty slices and broil for approx 2-4 more minutes. (Keep a bee close eye on them. Do not walk away. Your broiler can turn from perfect to ash in a blink of an eye.)

Remove from oven when bread is golden brown and cheese has melted.

Add spinach. Top with drained tomatoes.

Enjoy!

Roasted Bell Pepper and Zucchini Tostadas with A Spicy Garlic Hummus! Delicious!

Dice:
Zucchini
Peppers
Onion

Season with:
Hot Paprika (my favorite)
Cayenne
S&P to preference

Toss in Olive oil (make sure you coat the veggies in a nice layer of oil to assure they roast evenly.

Bake veggies at 425* for approx 30 minutes. Stir halfway through.

Hummus:
2 cloves of Garlic 4 if you love it as much as we do!
12 oz cooked chick peas (skin them if you used dried)
3 tbsp lemon juice
3 tbsp Olive oil
S&P to preference
1/3 cup Almond milk (or milk of your preference)
Blend well in a food processor

Note: if too thick you can add water a little at a time as it blends until desired consistency.

You can fry or bake your corn tortillas. I coated mine with olive oil and broiled them for a couple min on each side.

Enjoy!
