Salad recipes are one of the most unpopular recipes on my blog, but I like them. Burrata makes the salad rich and filling because it’s not like any other cheese. Sure, fresh mozzarella is delicious but it doesn’t have that gooey creaminess. Feta adds too much acidity to this lemony salad. Cheddar? ✋ Please. I’m not saying other cheeses aren’t good, it just doesn’t work as well as burrata does for this salad.

For 4 servings:

  • 1 ½ c. sugar snap peas
  • 3 oz. arugula
  • 2 green onion, thinly sliced
  • 1 tbsp. freshly chopped basil
  • 1 tbsp. freshly chopped dill
  • 1 tbsp. freshly chopped parsley
  • 1 c. thinly sliced cucumber
  • 8 oz. burrata
  • Lemon salad dressing (recipe below)

Bring a large pot of salted water to a boil (just like pasta). Prepare a bowl of salted ice water (I typically use a large Pyrex quart bowl with about 1 tablespoon of kosher salt) and a slotted spoon next to the stove. Cook the sugar snap peas until crisp-tender, about 1 minute. Use a slotted spoon to transfer peas to ice water to cool completely. Drain and pat dry with a clean towel. Once cooled, slice peas in a half crosswise.

Mix sugar snap peas with arugula, sliced green onion, herbs and cucumber. Arrange and plate; and divide burrata among the plates. Serve with salad dressing.

Salad dressing

  • 4 tbsp. extra-virgin olive oil
  • 2 tbsp. freshly squeezed lemon juice
  • 1 tsp. granulated sugar
  • ½ tsp. Dijon mustard
  • ½ tsp. kosher salt
  • Freshly ground black pepper, to taste

To make the dressing, combine the first 4 ingredients in a jar and shake. Add salt and pepper, adding more if desired to taste.

Dumpling soup. It’s basically chicken and dumplings without the chicken, so it’s vegetarian. Just use vegetable stock, onion, garlic, and your preferred veggies (I used carrots, broccoli, and peas.) I made a roux with my aromatics and carrots before adding the stock. Broccoli is best added in the last 10 minutes so it doesn’t overcook. Whole Wheat Nachos + salsa.
If you are on diet this is an amazing snack you can have .
All I did is just backed the left over laal ruti and made nachos. And with some onions tomatoes and lemon juice made the salsa. And some cheese on top.
Don’t throw away that hard and dried Ruti/Roti
Bake it, make it and turn it into nachos.

Roasted Bell Pepper and Zucchini Tostadas with A Spicy Garlic Hummus! Delicious!

Dice:
Zucchini
Peppers
Onion

Season with:
Hot Paprika (my favorite)
Cayenne
S&P to preference

Toss in Olive oil (make sure you coat the veggies in a nice layer of oil to assure they roast evenly.

Bake veggies at 425* for approx 30 minutes. Stir halfway through.

Hummus:
2 cloves of Garlic 4 if you love it as much as we do!
12 oz cooked chick peas (skin them if you used dried)
3 tbsp lemon juice
3 tbsp Olive oil
S&P to preference
1/3 cup Almond milk (or milk of your preference)
Blend well in a food processor

Note: if too thick you can add water a little at a time as it blends until desired consistency.

You can fry or bake your corn tortillas. I coated mine with olive oil and broiled them for a couple min on each side.

My family decide on little cesars tonight so I went ahead and made me some ramen noodles added my veggie chicken strips and instead of the seasoning that comes with it I added balsa ic vinegar and sun dried tomato vinaigrette. We already had bread sticks so it was a match made in heaven

2 whole wheat flat breads
½ block organic tempeh
½ cup pinto beans
1/3 cup pineapple salsa
1 cup chopped kale
¼ cup vegan cheese
1 tbsp taco seasoning
¼ cup pineapple

Grind up tempeh (She used a mini food processor) to achieve a minced ure and chop up kale and pineapple.
Add tempeh, taco seasoning and salsa (if you don’t have pineapple salsa, any other kind will work as well ) to a non stick pan and cook for a few minutes on medium to high heat. Stir in pinto beans, kale and pineapple.
Split vegan cheese and tempeh mixture onto one half of each flatbread, flip the other side over and bake in a non stick pan on both sides (medium heat) until golden brown.
Serve with a little bit of extra salsa or hot sauce and enjoy!
