Lunch today is some cold potatoes, baby avocados and salsa. Super simple but so delicious! Did you know that cold potatoes are an awesome prebiotic?
I was so pleased that this batch of baby avo’s have turned out to be perfect (which any one in the uk can attest to is a rarity. Most avocados you buy either stay hard or go brown and gross before you can eat them)
I had two as they are so small (about the size of a plum) and who ever begrudged a girl some healthy fats!?

I love cooking big batches of potatoes and sweet potatoes for days when I’m not in the mood to cook but still want a healthy carby hit

Healthy af spaghetti bolognese for 2. Sauce 1 medium carrot1 stork of celery1 small onion 1 tbs

Healthy af spaghetti bolognese for 2.

Sauce
1 medium carrot
1 stork of celery
1 small onion
1 tbs garlic (or more if you are a garlic lover like me)
1 can lentils or about 1 ½ cups soy mince
1 tbs dried Italian herbs
1 tbs tomato purè
1 can tinned tomatoes
2 tsps miso

(Optional)
1 tbs liquid amino (I use maggi liquid seasoning)
½ tbs chilli ( I used West Indian chilli sauce)
¼ cup red wine

Method

Dice onion, celery and carrot + mince garlic

Put onion + garlic in a nonstick saucepan with aprox 2 tbs of water

Sweat of onion and garlic until soft (if things start to stick just add a little more water)

Add in the carrot and celery and cook down until tender (again if things stick just add a little water)

Stick in your mince/ drained lentils and give a mix around

Put in all the other ingredients apart from the tinned tomatoes and mix

Add tinned tomatoes and mix thoroughly then turn heat down and simmer for 30mins-1hr stirring occasionally

I served it with buckwheat penne, steamed kale, ½ an avocado and some nutritional yeast

Person: so what kinda vegan are you? Are you like high carb/low fat, keto, whole foods plant based, organic, raw, fruitarian, high protein, low carb, junk food, gluten free….

Me: Yes.


N.b.Apart from gluten free that has literally nothing to do with animals and I’m honestly baffled how the correlation came about

So I have made a giant vat of porridge to have this week. This is my favourite flavour which is oatm

So I have made a giant vat of porridge to have this week. This is my favourite flavour which is oatmeal raisin cookie. I did enough for about 7 days or for a family of 4 for 3 days

Ingredients
6 cups plant milk ( it doesn’t really matter but I used almond milk
2 cups oats
1- 1 ½ raisins
3 tea spoons cinnamon
¼ ground ginger
1/8 tea spoon all slice
2-4 tea spoons vanilla extract
2-4 tablespoons stevia
1-4 tablespoons maple syrup

Method
Stick it all the ingredients apart from the stevia and syrup pot at the same time and bring to the boil the simmer on low until it’s your preferred consistency ( I like it slightly looser but I think that’s more a uk thing. If you rather a thicker consistency just reduce the liquid slightly and cook a little longer.

Stir it every so often and tip into a container
cool.

Apple “doughnuts” aren’t a new thing but never the less they would be such an easy way to pass time and encourage food interaction with the youngins’
Just core and slice a few apples and stick what ever decorations you want them to use and boom a fun interactive (sort of healthy) dessert

Sunday cake. I tried yet another chocolate covered Katie recipe but not gonna lie, this turned out a little disappointing. It may have a small amount to do with the fact I ( being ever observant) used buckwheat flour instead of spelt . I will now have to keep making carrot cakes until I am satisfied with the results haha. Bright side is its gluten free I guess!

Made these vegan fajita bites as we had company over. I also made vegan sliders and apple pie samosas but didn’t get the chance to snap a picture (I will be sure to next time so I can jot down the recipe as it was all very improvised )
It was al last minute so I had to rustle up canapés from what we had around to house

Ingredients
1 old el'paso fajita kit (or equivalent)
2 bell peppers (I used a red and a yellow)
1 onion
Minced garlic ( I used 2 of the frozen blocks)
Vegan ‘chicken’ ( 300g. Vegan quorn fillets work well)
Vegan cheese
Spring roll wrappers ( wonton, dumpling cases would work fine too. They are in the frozen section. I got mine in Asda. If you get the large spring roll cases just cut into 4)

Method.
If using frozen quorn fillets microwave as instructed on the packet for 2 minutes cut into strips about the size of your pinky finger and set a side.

Dice onion and add to a lightly greased pan along with the garlic and sweat down until translucent.

While the onions cook down chop the peppers about the same size as the 'chicken’

Add the chicken and peppers into the pan and give a gentle mix careful not to break the pieces. Add the seasoning from the kit and cook while gently mixing ( I found a spatula the best for this)

Just before it is completely cooked add ½ -¾ of the salsa and again mix then turn of the heat and leave to cool.

Whilst the fajita mix cools cut the cheese into sticks about the size of the chicken and about a £1 in thickness.

If required cut the spring roll wrappers into 4

One the mix of cool place 1 pice of chicken, some of the peppers and a piece of cheese on top of one of the squares on the side closest to you. Wrap as you would a spring roll or burrito. Seal with a little water and repeat.
(Optional) spritz with a little spray oil.
Bake at about 190’ for 10-20 minutes or until crispy.
Serve with salsa and guacamole

I think that nice-cream is one of the best parts about being vegan and for some reason non-vegans just don’t get told about the joy of dessert for breakfast until they join the club

Here is my recipe which does include healthy fats (cue audible gasp from the hclf vegans )

3 overripe frozen bananas
1-2 tsp vanilla extract
2- tbs- ¼ cup plant milk (I used almond) add a little at a time just to loosen the mix in the blender
1-3 tbsp peanut butter ( I think you could use pb2 but I haven’t tried. Remember that some healthy plant fat in your diet is good for you and this boosts the protein for those who worry about that kinda thing.

Stick everything in the blender and whizz until smooth and delicious

I like to top with milled flaxseed to get those good ol’ omega 3s

I have a cup of coffee strictly for the B12 in the almond milk of course

Today I had banana+peanut butter nice-cream topped with milled flaxseed ,mixed grains and vegan quorn burgers and finished off with a giant plate of potatoes and sriracha (I think there are about 3-4 big potatoes on that plate )

I will be going into more details on a few foods that I think deserve more info throughout the week so look out for that!

I shall also keep you guys informed on this agonising week of no bread

So while this isn’t the most nutritious day it also involves one of my all time, ride or die favourite foods. To say I’m obsessed with kimchi pancakes (kimchijeon) would be a massive understatement haha.

So full disclosure I was so busy doing diy house stuff (not the cute YouTuber kinda DIY but more the drilling into walls and building shelves ) I forgot to take pictures of everything I ate but fortunately I am a creature of habit and already ate the things I didn’t take pictures of earlier in the week haha .
I was perusing the ramen section at the super market and low key lusting after the shin cup noodle but always thought they had anchovies I them. Imagine my surprise when I looked through the ingredients and saw no animal products! This is one of my favourite “junk” foods so I was so so so happy enjoying a Saturday treat

Also for uk peeps veetee are coming out with a new packaging for their rice meaning that the old paging is being sold super cheap at lots of supermarkets (I have seen them at Asda and Lidl for around 78p ua packet) it you’re like me and like to keep microwave rice about for when you CBA I recommend stocking up as (in my opinion) the whole grain and especially the Jasmine rice and delightful

Day 4.
Well this day is really divided into two halves, bb and ab (before biscoff/ after biscoff ) definitely in recovery from all that junk so lots of nice simple stuff to eat today. I even used my precious mangosteen ( £2.50 for only 3). Mangosteen one of my favourite fruit not just because they look like they’re straight out of a video game and the name sounds like they should be a partner in a law firm but also because they are super, super delicious ( think a really flavourful lychee but slightly more tart)
I also forgot to take pictures of most of my water today but figured it wasn’t too big of a deal as you all no what it will look like

I have been thinking of taking a break from bread for a little while as I feel like I often just eat toast and it’s somewhat limiting the variety in my diet (cos I’m super lazy and toast is bomb haha). What do you guys think?

So after my third spoon of biscoff spread I resent my earlier excitement as ( despite how tasty) it had left me feeling like a kid the day after Halloween who ate all their candy

It has proven I haven’t grown up enough to be trusted with stuff like this haha.

It makes me want just a bowl of wholegrain rice and chickpeas and nice simple whole foods

May 30, Memorial Day, 2022

I started the day by making our lunch. I made a savory sauce, roasted sweet potato cubes, smokey collard greens, and barbecued tempeh. All plants. Not a single animal product. Nobody died for my lunch.

In the afternoon my beloved partner and I walked Nacho in the hills above our house. She brought her Polaroid SX-70 camera and took a few pix using 5-year old film. Surprisingly, some of the pictures demonstrate the dreamy Polaroid glow. When you shoot Polaroid, you are sometimes blessed with happy accidents. That’s life with a 50-year old camera.

In one of the pictures, I’m wearing a new pair of glasses that I bought online, from Zenni. I’m using a temporary prescription for the next few months until my cataract surgeries heal up.

I’m going to get back into photography, in a small way this time. I’ll be putting some photos here from time to time.
