Jackfruit   (Artocarpus heterophyllus)

Harvested our first jackfruit of the season!  I was always worried that I wouldn’t know when it was ready, but the smell of the fruit was the giveaway - a sweet, fruity aroma filled the back yard.  They are not small fruits, ours weighed in at a whopping 28.6 pounds.  

Got out my tools (bread knife, steak knife, bowls, and gloves), and spread out on the kitchen floor.  It felt like I was cutting a basketball in half.  The outside gave when pushed on, but was not soft or mushy.  The internal part of the stem ran the length of the fruit, and had the texture like a tough mushroom.  The remaining parts of the fruit are a series of rubber band like fibers, the edible pods, and the seeds.

After making a series of cuts, I was able to pry the halves apart.  But by this time the rubber gloves had torn, so I just dug into the latex filled mess with my bare hands.  Once I figured out the pattern in which the pods were arranged, it became a much quicker process.  However, the fibers were dense, and seemed to be trying to protect the pods from my eager fingers.  In all, I filled 2 big freezer bags with fruit: 1 for eating fresh, the other to freeze for use later.

What was left, was a shell of what I had started with; shredded and only a fraction of the weight.  A prime example of why jackfruit is being used as a pulled pork substitute.

Last year, after we ended up with so many seeds, we searched online for a use for them.   They can be cooked in many ways, of which we prefer boiling.   Once done they have the consistency of a potato, with a nutty flavor.

The edible pods are actually petals, hundreds which form internally.  You either love jackfruit or hate it.  The texture is strange - crisp yet chewy.  Said to smell and taste like Juicy Fruit gum.

Olenko’s Raw Vegan Oat Parfait with Jackfruit and Strawberries 

 Oats:

1 cup gluten free organic oats

2 TBS organic shredded coconut

2 TBS organic goji berries

2 TBS organic pumpkin seeds

2 TBS organic chia seeds

1 ripe organic banana

pinch of cinnamon

pinch of ginger powder

1 cup pure water

1 tsp raw organic  coconut nectar or maple syrup

In a bowl soaked the chia seeds in a water for about 10 min, add oats, banana and the rest of ingredients. Mix well with a spoon. set aside for 20 min or overnight, you can use nut milk instead of water like almond milk or coconut milk.

When ready to eat in a mason jar layer the parfait, at the bottom start with oats then sliced jackfruit and strawberries, then oats again. Repeat until the jar is full. Serve with banana- jackfruit ice cream.

Fruits for Parfait:

1 cup jackfruit

1 cup strawberries

Raw Banana-Jackfruit  Ice Cream

1 very ripe frozen banana 

2 TBS jackfruit

2 dates

pinch of vanilla powder

2 TBS of pour water

Blend together in the Vitamix and serve immediately over your parfait. 

This is very healthy breakfast as well as very filling. It can be serve as a raw dessert, maybe use small serving glasses instead of mason jar. Great for kids. You can use other fruits that are in season. Enjoy : )

BBQ jackfruit bowl with pineapple salsa!

Jackfruit pulled pork it’s so easy to make and it will fool anyone into thinking it’s the real thing. This stuff is legit!

Rinse and drain one can of young green jackfruit, take out the center/hard part of the fruit and discard. Place in a mixing bowl and add 2 tsp smoked paprika, 2 tbsp coconut sugar, 1 tsp garlic powder, 1 tsp of onion powder, ½ tsp chili powder, ½ tsp pepper,½ tsp of salt. Toss to coat.
Then heat some oil in a skillet over medium heat and add your jackfruit, cook for 3-4 minutes, then add ½ cup of bbq sauce and enough water to thin and cook for about 20 minutes at low medium heat.

Pro tip: use leftovers to make “pulled pork” sandwiches ;)

Pineapple salsa

I don’t measure this but is basically chopped tomatoes, red bell pepper, fresh pineapple, avocado, cilantro, lime juice, jalapeño, sea salt and pepper

You can also use mango instead of pineapple, just as good.

Hey so I thought I’d share a really easy vegan recipe that I use for serving at parties, or to just have as a “cheat meal” at home!

This recipe is great, and really simple to master and use as a meat substitute. Jackfruit is high in nutrients and fiber, and can be found in most of your local Asian food markets!

Shredded jackfruit barbecue sandwiches!

So this took me approximately 30 minutes to make (including prep time) by pan, but using a slow cooker is also an option!

Ingredients you will need:

  • 1 pound of jackfruit (preferably frozen)
  • ½ of a white onion
  • Barbecue sauce of your choosing
  • 2 cloves of garlic
  • 2 tablespoons of brown sugar
  • Pinch of salt & pepper

Directions:

  1. The first thing you’re going to want to do is defrost your jackfruit, which you can do by leaving it in a bowl in your refrigerator overnight, or running it underneath cold water for some time (heat can turn it into mush)
  2. Chop your onion into small chunks, same with your garlic!
  3. Place in strainer and de-seed jackfruit, and then squish out all the water with your hands until it is as dry as you can possibly get it ! (Also note that if you cannot remove all the seeds, that is okay!)
  4. Convert to bowl, and shred with a fork (similar to how you would shred pork) and sprinkle in your brown sugar, salt, and pepper! (This helps your jackfruit retain more flavor later on!)
  5. Taking a large cooking pan, set it to medium heat, and add about ½ a tablespoon of vegetable oil (you can also use coconut oil or olive oil if you like.)
  6. Add the onion and garlic mixture, and stir around occasionally for a minute until some you see some color, and then add in your jackfruit!
  7. Cook your jackfruit on a medium heat (stirring occasionally) for about five minutes until you see it starting to brown at the edges.
  8. Once browned slightly, reduce your heat to low, and add in your barbecue sauce with equal parts water, and stir around (I start with half a cup of bbq sauce and half a cup of water, but you can always add more later!!)
  9. Cook on low for 25 minutes, stirring occasionally, and then remove from heat and serve!
