If there’s one thing I could eat for the rest of my life it would be sushi, buuuut it makes me crazy mad to pay 10 bucks for 8 sad rolls that only have cucumber and carrots in it, like whaaat? Why tho?
So here’s my cheap and lazy version of veggie sushi, a deconstructed sushi bowl, that cost me 0 euros cuz I literally had everything at home and half the time to make because who the hell got the time to roll sushi for hours
Love this meal, you can throw whatever veggies you got laying around, a protein of choice (tofu, beans, tempeh, salmon, tuna, chicken etc…) a grain like sushi rice, or whatever rice you got, quinoa.. and a yummy dressing like a spicy Mayo, garlicky tahini or as simple as tamari/soy sauce, and boom, you got yourself a meal that at any restaurant could easily cost you up to 18€ .
This is what’s inside my bowl
Base is sushi rice.
Marinated ginger baked tofu (rice vinegar, sesame oil, tamari, ginger and a bit of maple syrup)
Cucumber
Carrots
Mango
Edamame
Avocado
Pickled red onions
Toasted nori
Dressing is a spicy vegan mayo: I used Hellman’s vegan mayo, added some rice vinegar and sriracha.
And a sprinkle of sesame seeds.
