Today in Harlem Buffalo Cauliflower w/ a Greek yogurt based “Ranch” dressing. I think I cut approx 800 florets of Cauliflower for 200 ppl .
It’s so worth it though to see ppl love something that’s new to them! Once you make buffalo sauce you can put it on everything. Cauliflower + Roasted Chickpeas are two of my favorite canvases. . . To get a nice batter I mix whole wheat flour, water, almond milk, paprika, garlic, cumin. I dip in the batter and bake at 375 for 30 min. Bring it back out coat with sauce and back in for 5-7 minutes. Super duper yummy for Football season or any game day snack.

Cleaned out the fridge/pantry came up with this. Watch on insta story to see how easy it is. This dish would cost you less than 15 bucks for 3 servings take under 20 min to make when prepped . It’s canned wild yellow tail, good quality dried pasta, veggies + punched up Healthy sauce . .

Today I did a lot of meal prepping..more on that tomorrow and in my insta stories.
Tonight I ended with Crispy Snapper in a coconut, Sofrito, ginger, turmeric, lemon broth. Topped w/ smoke salt candied cashews, crispy shallot + capers, cast iron tomato remoulade. For a healthier spin I dredged the snapper in chickpea flour + added my own spice rub. . .
Enjoyed with a little bit of all the things I made today..my fave was the charred corn, peach, black bean chipotle salsa cause there’s still 12 days of summer!
Back to a full schedule of teaching and engagements means being extra sure I’m getting all my nutrients and fuel to be and do all the things my community needs of me.
One of my staple fave big breakfasts. Booked organic cage free spiced eggs (turmeric paprika black pepper sea salt). @hempsworthfarm cast iron mini heirloom tomatoes w/ lots of garlic + parsley. Sautéed spinach and a truffled avocado toast on sprouted 12 grain. Paired w/ a big green juice (kale, spinach, chorella, cucumber, chard, Ginger, lemon).
Let’s step into fall claiming our glow, best health + selves! …..
Back home means back to eating predominantly Whole Foods + preparing them. Although I’m always a little tired after day 1 back from a trip I like to restock right away so I don’t go down the seamless slope.
No need to wait till Monday for a “fresh” start everyday is a fresh start if you want it. If I have access to a kitchen I’m cooking because just like a shower it’s something you should do daily when home (of course there’s exceptions but I like to make it the rule rather than exception)
And then I went through 3 sheet trays of this combo today @fortunesociety back in NYC which means right back at it with my community ✌.
Today I made my own low sodium old bay seasoning using items like celery seed, mustard powder, smoked and sweet paprika, black pepper, ginger. Then corn, broccoli, onions, green beans, potatoes got tossed in the seasoning w/ evoo. You could easily add your own vegetarian or turkey sausage for at home foil packs.
I also blanched the broccoli + greenbeans seperately then tossed in so they retained their crunch and color. It’s been a while since I had to pan out several trays for one demo! Thanks for the veggie love Harlem!!
LA trips aren’t complete without late night taco runs to our favorite authentic side of the road spots like Cactus Taqueria in hollywood. The shrimp, fish + veggie tacos are my favorites ..
Brunch @gjustabakery the Heirloom Tomato monsieur on housemade sourdough w/ gruyere, Mornay sauce. Seasonal Pie ( blueberry) , salted house cured anchovies, caper potatoes. So much yum.
Gave me Katz deli Vibes as you get a ticket and step up to an Uber busy counter to make selections.
A great nights rest + Waking up to lush greenery and the sound of waterfall (manmade ) 10 ft away. Exactly what I needed. We have seasons + moments for grinding and others for resting/restoring. Make room for both!
Baba Ganoush. Smokey Charred Eggplant Dip. Today’s dish for 200 @fortunesociety . Like the cousin of Hummus, I gave Harlem one of my favorites variations and use of eggplant.
Charred eggplant is blended with EVOO, Garlic, lemon, cumin, sea salt, paprika, Greek yogurt, crushed red pepper and I like to add some fresh herbs like mint + grilled lemons.
For many it was their first time having this dish and I’m glad they enjoy it as much as I do. .
