baked peaches + cinnamon + vanilla almond milk + little bit of brown sugar

I was craving peach cobbler because a mommy blog on pinterest spammed my home page with gorgeous desserts… not complaining… it just made me really crave buttery gooey yummy cobbler. so i made this. 

The “fiesta” part is probably not very pc of me.. but it was basically a party in a bowl, so I will stand by my title.

  • ½ chipotle-lime chicken breast (from Central Market) // grilled 
  • guacamole // avocado + green salsa + diced onion + diced tomato + chopped cilantro 
  • ¼ cup corn // roasted in a hot pan for a couple minutes 
  • mixed greens // whatever floats your boat

** I later added more salsa because I used a kale mix and it needed a little extra something to hide the.. kaleness. to be perfectly honest

I have been complaining about being alone this weekend because everyone is out of town (and by everyone, I mean by roommate and my boyfriend). But really, it has been nice to have nothing to do except cook and workout and then blog about it. I guess it’s just weird not having homework to avoid - it’s making procrastinating less enjoyable since, well, it’s no longer procrastinating. You win, universe. You win. 

But I won with this bowl. Because it’s awesome. 

Thank goodness I already received my diploma. Based on this post it would be difficult to convince anyone I actually received a college degree.

things were grilled. we grilled chicken. what else can i say about the events of last night? we also grilled whole red peppers. and we drank wine while doing so. my boyfriend made guacamole again. we made tacos. it was freaking amazingly delicious. all of it.

The weather was perfectly warm, the sun was setting, and my wine glass never ranneth dry. If anyone is in college or just happens to get a little sloppy after their first glass, these are perfect. I rave about them to everyone and they have saved me a pretty penny for not having to replace my glassware every time we have people over.

Grilled Chicken Tacos

chicken breasts marinated in Italian dressing // whole red bell peppers // corn tortillas // guacamole // onion tossed with cilantro and lime juice

grill chicken 2 minutes per side on high heat & 8 minutes per side on indirect heat. grill whole bell peppers on high heat rotating when grill marks show.

Crunchy Cashew Thai Quinoa Salad with Ginger Peanut Dressing  // Vegan Mushroom Soup // Sweet Potato

I would love to eat a cleaner, more plant-based diet but end up putting cheese and eggs on everything. These recipes look like I wouldn’t miss either of those ingredients one little bit. (Or maybe just a little bit, that would also work for me)

I say this, and then I get to the store and completely forget any plans I had thought about and just get by basics: sweet potatoes, kale, eggs, almond milk, yogurt, and apples. Like every time. 

If anyone would like to share their favorite vegan/vegetarian/healthy recipes with me I am all ears!

Crispy Garlic Tofu Butter Lettuce Wraps

This was my lunch today. I shot this in the front window of our living room. I like the way the light works in this spot of our house. I’m definitely going to use this spot for more of my food photography portfolio, which I’m trying to build. I’m also trying to build my cooking skills. This was soo Yummy. This is a variation on my lunch yesterday, partly because yesterday’s crispy garlic tofu dish was so dang good that I wanted it again. But also party because I still had a bunch of the same ingredients leftover. And I needed to break into the hoisin sauce I didn’t use yesterday, to see what that would bring to the dish. It brought a lot of deliciousness, but hoisin is so salty. I’m glad I had the dipping sauce and fresh lime juice to cut through all that hoisiny saltiness. The addition of peanuts added a whole other level of flavor and crunch as well. The was quick to make, about ½ hour for everything.

For the garnishes: Wash and spin butter lettuce leaves, slice sugar snap peas, slice green scallions, peel, seed and slice cucumber, crush peanuts, slice limes. 

Cook the crispy garlic tofu the same way I describe in the previous recipe

Assemble the lettuce cups on the plate, add a tiny bit of hoisin to the bottom of each cup, (optional) fill with the crispy garlic tofu, garnish with all the veggies, peanuts, organic black sesame seeds, and fresh mint. Now you just fold them up and dip in the spicy dipping sauce. Yum!

For dipping sauce, combine 2 tbsp lemon or lime juice with 2 tbsp brown sugar, 1 fresh chopped chilies ( used a seeded jalapeño), add 1 tbsp fish sauce. Adjust for your own salt / sweet preference. I can’t wait to make this again.

Through the Garden Benedict

This is my new favorite; Poached eggs on avocado, goat cheese toast, with fresh fruits and vegetables. This is a fresh take on a Benedict, with no Hollandaise. The egg yolk and citrus juices act as a sort of deconstructed Hollandaise. It’s delicious! I didn’t make Hollandaise because I’m trying not to indulge in buttery dishes too often. That being said, I’ll make one of these with Meyer lemon Hollandaise soon, possibly this weekend, because we have many Meyer lemons on our tree. And because Hollandaise is so damn tasty. You can make this with any fresh vegetables, greens, pickled things, herbs and fruit you have on hand. It comes out delicious every time. You can use ham, bacon, sausage or make it vegetarian like this one. This particular combo was crunchy, savory, earthy and deliciously balanced. My hubby and I both loved the addition of thinly sliced celery, which seems like it wouldn’t be that great, but it was perfection.

This plate = Dave’s multi grain Killer Bread, thin sliced & toasted, goat cheese, sliced avocado, orange segments, apple slices, celery, sliced very thinly, celery leaf, tomato, kalamata olives, marinated artichoke, and fresh cilantro. The poached egg is placed on top of the cheese toast, then garnished with all the freshness, and an extra squeeze of orange juice on top. Try it, it’s so good. 

If you’ve never made a poached egg, it’s easy. Boil about 3 - 4 cups water in a sauce pan, add 1 tsp vinegar to the water. Once it boils, stir into a gentle whirlpool, crack an egg in the center and let it cook for 2 to 3 minutes. Remove with a slotted spoon to a paper towel lined plate.

Dreamy matcha latte to start my morning✨ I never really drank coffee before last year (exam period is a fun time ) but I’m slowly trying to wean myself off so I don’t have such a dependency hehe
I used:
3 tsp matcha powder
2 tbsp maple syrup or any other liquid sweetener
1 tsp vanilla extract
3 cups almond milk
½ cup coconut milk

Just heat up the almond milk until warm and whisk in maple syrup, vanilla and matcha until dissolved. Divide into two cups and add the hot coconut milk
