Vegan life conundrums 4.0

Person: so what kinda vegan are you? Are you like high carb/low fat, keto, whole foods plant based, organic, raw, fruitarian, high protein, low carb, junk food, gluten free….

Me: Yes.


N.b.Apart from gluten free that has literally nothing to do with animals and I’m honestly baffled how the correlation came about

Day 3. Busy ol’ day today and one you wouldn’t ordinarily see a food post from me haha. As you can see it wasn’t the most nutritionally complete day but I tried biscoff spread for the first time today and feel like a fool for not trying it sooner. Is it total junk? Yes but omg it’s soooo dreamy

Rice bowl with Right Rice (rice made from beans), tofu, pickled cabbage, alfalfa sprouts, cilantro and green onions with hummus.

Sweet potato brownies


Recipe:

- 330g sweet potato puree

- 2 ripe bananas (mashed)

- 100g oat flour

- 50g almond flour

- 4 tbsp cacao powder

- 100g apple sauce

- 1 tbsp coconut oil

- 50g date syrup (or maple syrup)

- 1,5 tsp baking powder

- pinch of salt


➡️ To make the sweet potato puree, peel and cut 1 sweet potato into chunks. Cook them in water for 20 minutes. Rinse and let cool. Place them in a blender or food processor and blend until smooth.

Preheat oven to 180°C upper/lower heat.

Combine all ingredients in a bowl. Grease a baking dish (21 x 21cm) with oil (I used coconut oil), pour in the batter, and spread into an even layer using a spatula.

Bake for 40 minutes.

Apple fritter pancakes

With chocolate spread, maple syrup and more apple


Recipe:

- 100g oat flour (finely blended rolled oats)

- 175g oat milk (or other plantbased milk)

- 75g apple sauce

- 1 tsp cinnamon

- 1 tsp baking powder

- 4-5 vanilla flave drops

- 1 big apple


➡️ Combine all ingredients (except the apple) in a bowl with a whisk.

Peel the apple, cut it into thin slices and remove the core.

Place a non-stick pan over medium-high heat and add a little bit of coconut oil. Once hot, pour 1-2 tbsp of the dough into the pan, press in an apple slice and coat with a little more dough. Cook for 1-2 minutes per side.

“Vegans eat only ”:

Yep, everything on the photos is vegan : tofu avocado bowl, apple pie, burger, ice cream in taiyaki. Vegan food is very versatile

Just watched this. Great little video, had a quick blurb of graphic scenes from slaughter houses though which is always emotional to see.

Hmmmm I had one of these burgers when I was in Maine, I was a bit unsure about it. Smelled like ground beef and I’m assuming tasted like it too but it’s been so many years since I’ve eaten it I can’t remember. Anyhow I think if I was ever given it again I’d pass. Much prefer a black bean burger. Though I may give this recipe a try anyways just as an experiment.

It was so awesome to read that on the set of GOT they made specialty fake meats to use during filing for the vegans on set! I never know that Dinklage was a vegan!
