No bake vegan biscoff cheesecake

Recipe:

- 100ml water

- ½ tsp agar-agar

- 1tbsp agave syrup

- 300g biscoff cookies (+ 8 for decorating)

- 120g margarine

To make the biscuit base, crush the biscoff cookies in a blender. Add melted margarine and combine. Press them in a spring form (26cm) lined with parchment paper. Put in the fridge.

After the apples have thickened up, pour them over the base, spread even and put back in the fridge.

For the cream filling, prepare the whipped cream with a hand mixer. Then add cream cheese, biscoff spread and sugar and combine. Pour over the base and refrigerate for a few hours.

For decoration I melted some biscoff spread and sprinkled it over the cake using a spoon.

easyveganfood:

Cinnamon, chia and coconut date energy balls.

These have been great during my third trimester for a little energy boost and a sweet tasty treat.

RECIPE: (to make 10)

2 cups pitted dates

1 cup coconut shreds

2 tbsp chia seeds

1 tsp ground cinnamon

METHOD:

Cut up the dates and put in a bowl with the chia seeds, cover with warm water (only just cover) and leave for 10-15 minutes, or at least until the water has soaked up. If you’ve accidentally put too much water in you can always add some more chia to soak it up.

(I don’t have a food processor so I mash them with a fork to the consistency I like, if you have a food processor you can get the mixture really smooth.)

Add cinnamon and coconut, mix in thoroughly and mold into balls.

Pop into the fridge for 30 minutes.
