I love cherries and strawberries, nothing better then summer fruits. Those popsicles are so yummy and easy to make. They are great for kids, or as a healthy summer snack. You will need:
2 cups organic cherries (pitted )
2 cups organic strawberries
1 TBS pure water
Mix all in the Vitamix or high speed blender until smooth. Pure the mixture into the popsicle molds and let it set in the freezer. Enjoy! Happy summer : )
Pour the mixture in popsicle molds and set in the freezer for about 15 min. Then Mix:
organic raspberries
organic blueberries
Add the the second mixture on the top of the popsicles and freeze until solid. Enjoy them on a hot summer day. Very refreshing and great for kids as a healthy snack. Happy summer!
Happy Independence Day America! I made this delicious raw vegan, law fat, gluten free and nut free cake for my friends for the 4th of July. It’s so easy to make and very refreshing. To make this cake you will need:
Bottom of the cake:
3 TBS organic gluten free oats
3 TBS raw organic cacao nibs
8 large medjool dates
In a cake form sprinkle oats and cacao nibs. Process the dates in a food processor add press them to the bottom of the cake form.
Top of the cake:
2 cups organic cubed watermelon
1 cup organic strawberries
5 very ripe organic bananas
1 TBS raw coconut nectar or maple syrup
Blend all in the Vitamix or high speed blender. Pour over the bottom layer and set in a freezer for about 6 hours or overnight. When ready to serve sprinkle the top of the cake with organic shredded coconut and decorate with fresh raspberries, blueberries, strawberries and mint. Enjoy : )
There is no better place than the beach for 4th of July! Sand, waves, sun, relaxation, fruits and summer fun. Happy 4th of July, whatever you are : )

Mix each layer separately in the Vitamix or high speed blender and carefully layer each color. Top it off with fresh figs, rasberries, strawberries, cherries, mint and sweat pea. Enjoy!

This is a great frozen smoothie that you can make on a hot summer day. Great for kids or as a healthy dessert for a summer BBQ or party. It’s so beautiful, healthy and easy to make. To make this smoothie you will freeze each color for about 30 min and then pour the next color on the top in order to make the stripes. You will blend each color in a Vitamix or other high speed blender. You will start with pink color.
Pink:
organic strawberries
organic banana
Beige:
organic banana
organic pear
Orange:
organic mango
organic pineapple

Olenko’s Vegan Summer Solstice Picnic on Hudson River
On this beautiful summer solstice night I invited my husband and friends for a vegan picnic. I made raw chocolates, chickpeas kale-avocado salad, rainbow quinoa salad, we had fresh strawberries from a local farm and organic, raw, vegan cheese from place in Brooklyn www.dr-cow.com
So healthy and yummy. Here is the recipe formy homemade Chickpea-Kale-Avocado Salad:
Chickpea-Kale-Avocado Salad:
2 cups organic dry chickpeas ( soaked overnight and cooked for 15min)
5-6 leaves of organic curly kale
1 cup organic baby tomatoes
2 organic avocados
1 small purple onion
1 organic lemon juiced
1 organic lime juiced
2 TBS raw coconut vinegar
2 TBS organic hemp seed oil
¼ tsp pink Himalayan salt
pinch of cayenne pepper
½ tsp curry powder
½ tsp nutritional yeast

So sad I couldn’t get a shot of this before it melted in the 30 degree heat Raw salted caramel slice (apparently the caramel has a real low melting point) Base: ¾ cup pecans, 1 ½ tbsp coconut flour, 1/3 cup cocoa powder, 2/3 cup dates (softened) Chocolate layer:½ cup vegetable oil, ¾ cup cocoa powder, 1/3 cup sweetener of choice, ¾ cup nut butter (tahini/almond), 1 tsp vanilla extract, pinch of salt Caramel layer: 1 cup dates, ¼ cup nut butter, ¼ cup sweetener of choice(maple, rice malt), salt, ¼ cup coconut condensed milk
Caramel: • 14 medjool dates • 1 tbsp pure maple syrup • 4 tbsp peanut butter • 2 tbsp melted coconut oil • ¼ tsp Himalayan sea salt • 1/3 tsp vanilla extract • 120ml water
Chocolate: • 5 tbsp melted coconut oil • 5 tbsp raw cacao powder (I used @lovingearth) • 1-2 tbsp pure maple syrup • ½ tsp vanilla extract
Method: 1. Blend all ingredients for base in a high speed blender until well combined. Press firmly into a lined tin or tray, place in freezer. 2. Blend all ingredients for caramel until smooth, pour on top of base layer and place back into freezer. Leave to set for at least 20 minutes. 3. Mix all ingredients for chocolate until smooth. Pour on top of caramel and place back into freezer. Leave at least 2 hours to set then dig in!
