Chickpea Burgers by @wearesovegan A nice, thick, messy burgers is always fun.
**Follow @vegansfoodrecipes for daily, simple, delicious vegan recipes**
Recipe:
2 cups frozen peas (defrosted)
2 tbsp mint sauce
2 x 400g tins of chickpeas (drained and rinsed)
1 onion
2 cups breadcrumbs
¼ cup sunflower seeds
1 garlic clove
salt and pepper
oil for frying
For serving:
vegan garlic sauce
tomato chutney
rocket
red onion
tomato
5 burger buns
Steps:
1. Soak the frozen peas in hot water for 10 minutes.
2. Add the peas, mint sauce, chickpeas, onion, sunflower seeds, garlic, salt and pepper to a food processor and pulse the mixture until it reaches a rough consistency. Avoid processing the mixture too much because it will be harder to shape into patties.
3. Transfer the mixture to a mixing bowl. Add the breadcrumbs and mix together until everything is fully combined, then shape the mixture into 5 evenly shaped patties. If the patties aren’t quite holding their shape, simply add more breadcrumbs until they reach a firm enough texture.
4. Add a little oil to a frying pan. As soon as the oil is hot, add 2-3 patties to the pan at a time and fry for 5 minutes on each side, or until they become golden brown.
5. Build each burger by spreading 2 tsp of garlic sauce on the bottom of a burger bun, then add a small handful of rocket, 1 patty, 2 tsp of tomato chutney, 2 slices tomato, 2 rings red onion and top with the remaining half of the bun.

Tonight’s dinner! Smoky tofu over quinoa with cucumbers and sauerkraut. Simple and delicious. I love meals like this. Hits the spot, loaded with protein, fills you up and makes you feel good. Then I have some cinnamon raisin bread cooling for later with some tea, I can’t wait. I took a nap and woke up and was a flury of activity, great reminder that rest can be just what we need. Special shoutout to @mcphersonkim56 for suggesting trying marinating the tofu in aminos, liquid smoke and cinnamon and slicing into matchsticks. Very late lunch with the biggest little brother. Roasted tomato and garlic pasta with spinach and hummus and sriracha and mixed mashed beans on the side I work between 3 and 6 hr shifts and each one is 1 hr travel there and another back and I’m finding it so hard to eat regularly around them. Must make more of an effort to meal prep!

-first meal of the trip and it was so good! the stuffed zucchini was mouth watering, I managed to sleep through the new year celebration due to a nasty case of jet lag.

2 whole wheat flat breads
½ block organic tempeh
½ cup pinto beans
1/3 cup pineapple salsa
1 cup chopped kale
¼ cup vegan cheese
1 tbsp taco seasoning
¼ cup pineapple

Grind up tempeh (She used a mini food processor) to achieve a minced ure and chop up kale and pineapple.
Add tempeh, taco seasoning and salsa (if you don’t have pineapple salsa, any other kind will work as well ) to a non stick pan and cook for a few minutes on medium to high heat. Stir in pinto beans, kale and pineapple.
Split vegan cheese and tempeh mixture onto one half of each flatbread, flip the other side over and bake in a non stick pan on both sides (medium heat) until golden brown.
Serve with a little bit of extra salsa or hot sauce and enjoy!
