I’ve noticed some posts in groups and on social media that speaks to why so many people have a negative association with veganism. It’s also why people who are vegan don’t want to be affiliated with the title. For those of you who are on the fence about becoming vegan and feel that way, those people are a minority. They don’t represent vegans around the world. We come in different shapes, backgrounds, and passions. .

Personally, I started my journey 18.5 years and I evolved and grown so much through the years. I never thought I would be vegan. It wasn’t a foreign concept for me growing up 7th day Adventist but I was good with being kosher. But one day something clicked and here I am almost 19 years later knowing it was the best decision I could have ever made. I wished I started this platform earlier but I thought I needed to look a certain way to be valued. Life forced my hand and said I needed to share what I know and now we have Yes Baby I Like It Raw. .

Food overhaul for meal prep for myself and clients. (Check out my instastories to see some of what I made) This Thursday is Spring Equinox. As most of us are slowing down due to current climate it is us a great time to cleanse and detox. Physically in addition to emotionally and mentally. Eat fresh fruits if you can there is a lot of fresh foods at the marketplace which is great for boosting your immune system. Drink more water consider buying a water filter in the future. Pictured is my @berkey_filters . Remember your food is your first medicine therefore it is your first line of defense. Many Supplements isolate vitamins from the foods we eat. So why not eat them and get the additional benefits from the other components present.

this is my go-to lunch. obviously this is not a mind blowing recipe or anything particularly special

this is my go-to lunch. obviously this is not a mind blowing recipe or anything particularly special but hopefully it will inspire you to mix it up and try a delicious new lunch. 

my go-to green salad

ingredients:

½ head chopped romaine 

½ large avocado 

¼ chopped cucumber 

2tbsp toasted pine nuts 

1tbsp humous (you can try my garlicky humous or buy shop bought)

drizzle extra virgin olive oil

sprinkle pink salt 

sprinkle fresh black pepper

sprinkle nutritional yeast

1. chop all yo veggies and toss together in a bowl. lightly toast ur pine nuts and add to the bowl. 

2. add the humous and drizzle with olive oil, sprinkle with salt, pepper and nutritional yeast and give it a good mix up. (this is especially good when ur avocado is ripe as it creates a creamy dressing)

3. inhale.

this is something I used to make before I was vegan, with any gourd that was cheap and available whilst at university; think sweet potato, butternut squash etc. this incredibly moreish treat is not too harsh on the purse strings and absolutely delicious. So, without further adieu let me introduce you to…

butternut squash mac (the vegan version)

ingredients:

  • 1 butternut squash, cubed
  • 300g pasta of any kind 
  • 4 tablespoons vegan butter 
  • 3 tablespoons plain flour
  • 500ml unsweetened almond milk 
  • 1 teaspoon mustard
  • ½ teaspoon paprika
  • 75g grated vegan mozarella
  • 3 tablespoons nutritional yeast 
  • 5 sliced sage leaves 
  • salt and pep

1. preheat the oven to 200* and boil a large pan o’salted water. 

2. chuck ur butternut in ur boiling water and boil for about 15 mins/until soft. scoop them out in to a bowl and mash. keep ur butternut water for ur pasta. 

3. in a small pan melt ur butter and whisk in ur flour. once combined and melted take off the heat. slowly add the almond milk and whisk again. put back on the heat and bring to a bubble, until the sauce is thick. add the mustard and paprika. 

4. cook the pasta (2 mins less than packet instructions so it bakes well) in ur water. drain (keep a cup of pasta water). add the pasta to the butternut and mix well then add ur mozza, white sauce and nooch. keep combining, add your pasta water if you need it to be a lil bit smoother then add to a large baking dish. top with a little more nutritional yeast, season well and add your sage.

5. bake for 30-40 mins. et voila!

this tex mex inspired salad is something.else. the great thing about this meal is it can be adapted and ‘chopped’ and changed according to your tastes and what you have in the fridge! 

vegan chop salad

serves one:

ingredients: 

veggies:

½ chopped red pepper

1 chopped spring onion 

2 large handfuls rocket 

chopped cooked corn on the cob

handful sliced cherry tomatoes or orange ones if you can find them!

‘coconut bacon bits’:

(this makes enough for more than one serving but keeps well in tupperware)

70g flaked coconut 

1 tsp liquid smoke 

1 tsp maple syrup or agave nectar

½ tsp smoked paprika 

1 tsp tamari or soy sauce 

‘chicken and cheese’:

i use a quorn five grain fillet as it’s crispy but any chicken alternative will work

i use violife mozarella in cubes but again this is a preference thing!

‘coleslaw’:

1 overflowing cup chopped red cabbage 

1 tbsp vegan mayonaise 

1 tsp onion powder 

1 tsp chopped basil 

1 tsp chopped chives 

1 tsp chopped dill 

1. preheat your oven to 180*. put your flaked coconut in your liquid smoke, maple syrup, paprika and tamari and coat well. on a lined baking tray spread your coconut pieces out. bake them for 15 minutes or until crisp. 

2. whilst that’s baking. add your cabbage to a mixing bowl and stir in with the mayonaise, onion powder, basil, chives and dill. 

3. add your chicken and cheese.

4. assemble however you’d like, the colours are so lovely it’ll look gorgeous however you make it!

This is a creamy and smooth sauce packed full of green veg with some crispy bits to add some texture. Absolutely delicious! 

groovy green pasta

serves one

ingredients:

50g dried fusilli pasta 

handful fresh basil 

100ml soy cream 

1 clove garlic 

1tbsp olive oil

1tbsp vegan parmesan 

handful fresh spinach 

2 handfuls spinach

tbsp nutritional yeast 

pinch salt

pinch pepper 

vegan bacon 

1. preheat the oven to 200*. in a baking tray add your kale and scrunch with your nutritional yeast, salt and pepper. add to the oven and bake for 15 minutes. 

2. cook your pasta according to packet instructions in salty water; this means you don’t have to add salt to your sauce. 

3. place your basil, ‘cream’, garlic, ‘parmesan’, olive oil and spinach in to a food processor and blitz until creamy. 

4. fry your bacon until crisp and chop up. 

5. once all your ingredients are ready place a saucepan on a low heat, add your pasta, sauce, kale and ‘bacon’ to the pan and stir the pasta for 4-5 minutes until thick and delicious. 

6. enjoy!

I have already posted a more basic, spiced version of tofu scramble. But this is the creme de la creme (minus the creme) and boy oh boy what a decadent breakfast this is. creamy, smooth, very naughty but oh so delicious. If ur ever feeling like a queen/king in the morning then this is the stuff for you. 

creamy queenie tofu scramble

ingredients:

1 minced garlic clove

pat vegan butter

½ block firm tofu

100ml soya cream

½ tbsp nutritional yeast 

1 tbsp chopped fresh parsley and basil (will work well with most herbs tho!) 

1. in a small frying pan melt ur butter on a medium heat. soften your garlic. add your tofu to the pan and smush down with the back of a spoon. 

2. once the tofu has begun to soften add the rest of the ingredients and give the lot a good stir. 

Add to toast, have it on it’s own or served by yr manservant in ur undies, i don’t really mind, just enjoy!

#sendnooooods VEGAN RAMEN TIME - this broth is super adaptable and can be used for a simple warming soup, a great base for ramen or you can even add rice for a hearty winter warmer. adapt it all you like, but keep the base the same as i assure you it is heavenly! 

I’m gunna lay out the broth recipe first then show you how to quickly assemble it as a ramen once the broth has simmered away nicely, so hang tight for the deets.

Vegan Ramen 

ingredients:

broth: (serves roughly 5)

1 tbsp sesame oil

1 white onion (in sixths)

1 tbsp miso paste 

1 green chilli (finely chopped) 

2 garlic cloves (finely chopped) 

1 tsp dark soy sauce 

1 tsp rice wine vinegar

1 vegetable stock cube 

handful of roughly chopped chestnut mushrooms

600ml water 

1. in a large saucepan, on a medium heat, add your sesame oil, allow to heat then whack in yr onion till nicely soft. follow up with yr miso, green chilli and garlic cloves. stir away for about 5 mins then add the rest of the broth ingredients, minus the water, stir for a further 2 mins.

2. add the water. bring to the boil. simmer for minimum half an hour.

3. You can serve it now or if you bare with me you can make this in to a rad ramen by following the next steps….

ramen: (serves 2)

200g pack noodles (microwaved to pack instructions) - ((you can use any noodles here but i find the cheap microwavable ones structurally v sound in a soup and using a microwave is obvs v easy))

250g long stem broccoli 

200g okra 

1 spring onion 

2 tsp sesame seeds

2 tsp fresh coriander (or cilantro if yr american) 

1. microwave yr noods. add your broccoli and okra to the soup and let those yummy greens simmer for a further ten mins. 

2. whilst this is goin’ on you can chop yr spring onion and coriander nice and fine. I also like to cook some spring rolls, tofu or dumplings sometimes to have on the side but i am greedy and this is an optional step. 

3. Assemble yr bowl:

noodles first

pour over yr soup - making sure you ladle in as many veggies as poss 

sprinkle over yr seeds, spring onion and coriander

devour.

Caesar salad was something I was so worried about not eating again when going vegan, but thankfully

Caesar salad was something I was so worried about not eating again when going vegan, but thankfully I think this comes pretty close. The right amount of crispy texture paired with that silken dressing comes inches away from heaven in my opinion. 

Crispy Tofu Caesar Salad

for the crispy tofu:

200g firm tofu (pressed) 

tsp dried basil

tsp dried thyme 

salt and pepper

tbsp olive oil 

for the salad:

a good serving of follow your heart caesar dressing (the best of the best)

2 cups spinach

a handful croutons (i used shop bought but you can certainly whip up your own)

15g violife italian hard cheese

1. In a large pan on a medium/high heat begin to heat your oil. Whilst the oil is warming, finely slice your pressed tofu in to squares - cutting them thin is important as it helps to crisp them well. 

2. Add your dried basil, thyme and a generous helping of salt and pepper to your oil. Drop in your tofu - we don’t want any overlap here as we want them all evenly crispy. Cook for around 3-4 minutes on each side or until they have begun to brown nicely. Set the tofu aside on a piece of kitchen towel to collect some of the excess oil. 

3. Assemble your salad ingredients and serve with the tofu on top!

Vegan lunch time has legit never looked this good. I’ve been nervous to try tempeh because I didn’t believe it could possibly be as good as everyone was making it out to be. Oh my lord was I wrong to give it a miss for so long. This was so so filling and so delicious. To be honest, that’s how I would describe most of my meals since going vegan. Anyway, this meal is crazy simple and I would defy even the most stubborn of meat eaters to not enjoy this. 

Smoky tempeh Bagel 

ingredients:

serves one

for the tempeh:

100g finely sliced tempeh 

1tsp liquid smoke 

1 tsp bbq sauce 

1/3 tsp yellow american mustard 

½ tsp paprika

½ tsp garlic powder 

pinch salt and pepper

olive oil

everything else:

sesame seed bagel

humous 

olive oil

curly kale

pinch of fresh parsley

1 clove garlic

½ cup chestnut mushrooms 

pinch salt and pepper

1. Oil a griddle pan and put on a high heat for a couple of minutes. Whilst this is heating up add your tempeh ingredients to a bowl and massage the barbecue sauce in to the finely sliced tempeh. Add to your griddle pan and fry on either side for roughly 4-5 minutes. 

2. Toast your bagel and put a small frying pan on a medium heat with a drizzle of olive oil. Once hot add your minced garlic and parsley, let this heat up until the garlic softens. Add your chopped mushrooms and kale. Fry for a couple of minutes and season to your taste. 

3. Add humous to your bagel and assemble your sandwich.

This is such an easy meal to whip up (and a particularly good hangover food if you’re trying to avoid processed and nasty food). Recipe is down below but as always feel free to tweak and add anything you like to your taste!

Sweet and plain potato fries

Ingredients:

1 medium white potato

1 medium sweet potato

olive oil

1 tsp dried thyme

salt and pepper

1. Preheat your oven to 180*. 

2. Slice your potatoes in to chip like sticks, i leave the skins on but that is personal preference. Rub them in olive oil, dried thyme and a generous helping of salt and pepper.

3. Bake for 45 minutes.

Super Garlicky Humous

Ingredients:

3 cloves garlic

1 tbsp tahini

1 tin chickpeas

1 cup water

1. Blend the above ingredients until smooth, if too runny add more chickpeas, if too chunky add more water. Again, this is personal preference, I like my humous chunky. You can also add olive oil if you like a more silky finish to the dip.
