Ingredients:
• 1 ripe banana mashed
• 2 egg whites
• 1 tbs of coconut flour
• 1 tbs shredded coconut

Method:
• Simply mix all ingredients, whisk & fry in a pan with a little coconut oil.

Whipped coconut cream:

Ingredients:
• 1 can of coconut cream (refrigerated overnight)
• 1 tbsp of maple syrup
• a few drops of vanilla essence

Method:
• scoop out hardened coconut cream into a bowl, leave out liquid.
• mix in syrup and vanilla, and whisk together until smooth & creamy

This might just be the easiest & quickest dessert EVER! All you need is one ingredient… frozen bananas!

Simply freeze frozen ripe bananas and then add them to a food processor to blend until smooth & creamy. I sometimes add a little almond or coconut milk to help it reach a nice consistency.

The beauty of this dessert is that you can add in different ingredients to create endless flavours! I will be posting some of my favourites soon. Above I have just added in some vanilla essence and cinnamon, and topped with coconut sugar. YUM!

I make a lot of green smoothies, and vary the ingredients each day. But this is my winning combo! SO delicious, you won’t believe its healthy. 

Ingredients:

1 frozen Mango

1 handful of baby spinach

¼ ripe avocado

1 cup of coconut milk 

1 tbs maca powder 

1 tsp of cinnamon

1 tsp of honey to sweeten (optional)

Method

Blend all ingredients until smooth

One of my favourite things to whip up for a healthy treat. Its smooth, decadent and has a rich chocolate flavour. This is one chocolate treat you don’t have to feel guilty about eating as it’s full of healthy fats, great for skin health, brain function and maintaining a healthy weight. Raw cacao is also high in magnesium and iron. This mousse is so guilt free, you can enjoy it for breakfast!

Ingredients:

2 large, ripe bananas

½ ripe avocado

¼ cup cacao powder

½ fps ground cinnamon

1 tbs organic 100% maple syrup 

½ tbs water 

Method:

Blend all ingredients until smooth! Top with raw cacao powder.

Impostor syndrome (also known as impostor phenomenon, impostorism, fraud syndrome or the impostor experience) is a psychological pattern in which an individual doubts their accomplishments and has a persistent internalized fear of being exposed as a “fraud”.[1] Despite external evidence of their competence, those experiencing this phenomenon remain convinced that they are frauds, and do not deserve all they have achieved. It can be soo paralyzing. The internal chatter can be incessant. You don’t feel like you are enough. You need to know more, get more, be more. But even when you check off the list satisfaction is elusive.

So this was a bit of an emergency meal as I hadn’t had time to go to the shops. and before you say it, i know, i know, there is an egg on that plate!! these eggs are a from a close family friend and i know that her chickens are as happy as can be! i also try hard not to put too much pressure on myself with my veganism and if i feel like eggs, as long as i know they are from a happy source, are not a terrible sin! 

last minute buddha bowl

serves one

ingredients: 

½ cup cooked quinoa 

pickled cabbage:

1 tbsp olive oil

1 tsp red wine vinegar

1 tsp oregano 

½ cup shredded red cabbage 

egg:

1 egg 

black sesame seeds 

veggies:

sesame oil 

garlic

1 spring onion 

1 cup chopped kale 

1 chopped pepper 

1 handful linda mccartney shredded duck (or equivalent)

sauce: 

1tbsp tahini 

½ tbsp sesame oil 

pinch salt 

1. put your quinoa in a bowl. 

2. put your egg in a bowl halved and sprinkle with black sesame seeds.

3. in a wok on a medium high heat cook your duck according to packet instructions. with 5 minutes left add your veggies and cook through. add to the bowl. 

4. whisk the sauce ingredients and pour over your bowl! 

5. that.is.it.yum.
