Here’s a blackberry pie I made about a year and a half ago. I’ve been trying out recipes from the Four and Twenty Blackbirds pie recipe book, and they have some oddly tasty ones in there.

Went brambleberry picking early yesterday morning while walking the dog, I haven’t decided whether I want to make another pie, a crumble or some jam

Dan - a memory of a morning spent with a good friend along my favorite river, the Smith River in the far north of California, the last un-dammed river in the state. It runs through the heart of Redwood country, an area of pristine beauty and relatively few people.  There is a private camping spot I have found along a lovely spot along the river. I try to go there annually now around the time the blackberries are in season (in this part of the country the grow wild like mad - and the area around the campsite has tens of thousands of berries bursting on the bushes.  Its fun to start the morning with some berry picking and on this occasion my friend Kat wanted to be photographed smushing some of the berries all over herself for portraits that were alternately slightly gruesome and delicious, before jumping into the crystal clear river for a brisk and cleansing skinny dip.

I wanted to make some representation of this memory that was a bit alien for a group exhibition were asked to participate in at Corey Helford Gallery. Its available now through the gallery!

The shrub is having a comeback. Popular during colonial times (it doesn’t require refrigeration), a shrub is simply a fruit-flavored sweetened vinegar mixed with carbonated water. Refreshing and light, this sweet-and-sour drink ideally suited for summer weather. However, we’ve noticed that store-bought shrub is ridiculously expensive so we decided to post our recipe for Blackberry Shrub. Plan ahead: shrub takes 4 days to make but truly improves after a few weeks.

• 1 cup fresh blackberries, washed
• 1½ cups white sugar
• 1 cup white wine vinegar
• Carbonated water

Place the blackberries in a quart canning jar. Combine sugar and vinegar in a pan set over medium-high heat. Bring the solution to a gentle boil, stirring constantly. Once the sugar dissolves pour the liquid into the jar, pressing the berries a bit with a fork to release their juices. Place a lid on the jar and let it rest in a cool dark place.

After 4 days strain the mixture (we use a chinois though several layers of cheesecloth will do the job, too), returning the liquid to the jar. The shrub is now ready to drink – mix 2-3 tablespoons of syrup per cup of carbonated water – though the flavor will mellow and improve after a few weeks. We keep ours chilled in the fridge.

Knocking out this mornings checklist with a side of blackberries❤️.
All berries have major benefits but this one in particular might make all the girls light up: “Phytoestrogens are naturally occurring plant estrogens found in blackberries that research has found may help to relieve the perimenopausal and menopausal symptoms like hot flashes. They may also help with the symptoms of PMS like bloating, food cravings, and even menopausal symptoms like hot flashes.” [source: healthdiaries.com] #enjoy #blackberries #lessmoodswings #lesscrazy #happygirlsaretheprettiest #melodyorganics (at North Hollywood, Californa)

BLACKBERRY CRUMB BARS
Adapted from Smitten Kitchen

Yet again, today I embarked on a blackberry culinary adventure. The original recipe calls for blueberries instead of blackberries, and lemons instead of limes, but since I can find neither in Ecuador, I thought I’d try to make magic with what I had. And magic it was. Unfortunately, I couldn’t get them to look that attractive, but don’t let the look fool you. They were very yummy.

Ingredients:

1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold unsalted butter (2 sticks or 8 ounces)
1 egg
¼ teaspoon salt
Zest and juice of one lime
4 cups fresh blackberries
½ cup white sugar
4 teaspoons cornstarch

Directions:

1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan.
2. In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
3. In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
4. Bake in preheated oven for 45 minutes, or until top is slightly brown. (Your oven may take longer, so just keep on eye on it.) Cool completely before cutting into squares.
