Ingredients: 6 skinless chicken thighs 1 Jar Pace Picante Verde Salsa (any Verde Salsa you prefer) 1

Ingredients:

6 skinless chicken thighs

1 Jar Pace Picante Verde Salsa (any Verde Salsa you prefer)

1 tsp. garlic powder

½ tablespoon paprika

1 tsp. chili powder

1 tbsp. olive oil

Salt and pepper for taste

2/3 cup uncooked quinoa

1 ½ cup green beans

1 cup canned black beans

Directions:

Season chicken thighs with garlic powder, paprika, chili powder, salt and pepper. Heat oil in large non-stick pot and add chicken. Cook chicken on medium/high heat 2-3 minutes each side then add 2/3-cup water and whole jar of salsa. Bring heat down to simmer and cover for 15-20 minutes or until chicken is full cooked.

I served with quinoa and black beans mixed and a side of steamed green beans.

Bison Stuffed Bell Peppers (Pimientos Rellenos de Bisonte) - Meal Prep

Easy, delicious meal you can prep for the week or make for dinner.  I added black beans as my source of carbs, which is entirely optional.  

I freeze the meals and defrost them in the refrigerator the night before I am going to eat them.  ALWAYS adjust portions to meet YOUR macros and calories.

Approx macros for each lunch: 421 calories, 53g protein (38g from lean ground bison), 43g carbs, 5g fat

Spicy chicken salad with grilled eggplant slices and arugula, with fresh mango slices. This is a great snack meal. Use a knife and fork to eat. Boom. (traduccion abajo)

Approx macros with 5oz chicken breast: 263 calories, 39g protein, 11g carbs, 8g fat (to reduce calories, use less chicken and remove goat cheese)

Recipe: (1) In a food processor, blend cooked chicken breast. Add garlic and onion powder. (2) In a bowl, add blended chicken, 1 large tbsp of nonfat Greek yogurt, 1oz goat cheese, diced bell pepper, black pepper, cayenne pepper and red onion. Season with paprika and Mrs. Dash Southwest Chipotle seasoning. Mix. (3) Lightly spray a skillet with olive oil and set the skillet on medium high heat. Add eggplant slices or wedges and sear the sides.

Ensalada de pollo picante con rodajas de berenjena a la parrilla y rúcula fresca, con rebanadas de mango. Esta es una comida excelente merienda. Utiliza un cuchillo y tenedor para comer.

Macros aprox con pechuga de pollo a 5 oz: 263 calorías, 39g de proteínas, 11g de carbohidratos, 8g de grasa (para reducir calorías, consumir menos pollo y sacar el queso de cabra de la receta)

Receta: (1) En un procesador de alimentos, mezclar la pechuga de pollo cocida. Agregar el ajo y cebolla en polvo. (2) En un bol, añadir el pollo mezclado, 1 grande cucharada de yogur griego sin grasa, 1 oz queso de cabra, pimienta cortado en cubitos y la cebolla roja. Sazonar con pimiento negro, pimienta de cayena, pimentón y Mrs. Dash suroeste condimento Chipotle. Mezclar. (3) Rociar una sartén con aceite de oliva y poner el sartén a fuego medio-alto. Añadir las rodajas o cuñas de berenjena y dorar los lados.
