Breakfast on a sunny fall Monday!

This week is hopefully going to be a good one, tonight I’m spending the night with my dear friend and fellow artist Ruby where hopefully we’ll make art and watch movies and have a really nice time!

Egg sandwich with yogurt and bran ✌

small flatbread wraps with lettuce, cheese and turkey pastrami for lunch with some peppers, Turkish apricots, yogurt and granola.

Today’s lunch was a good one but reminded me how much I really don’t love wraps or sandwiches unless they’re Donair

I got this yogurt in the states this weekend, I’m not used to weird American food flavours but I enjoyed this one!

I’ve been awake since 4am and tossing and turning all night before that…

Sleep and I have always had a hard time getting along. I adore sleep. The vivid dreams, the horrid nightmares, I love it all. For me however, it’s always been a delicate balance of medication, temperature, pillows, proper positioning, lights (I wear a sleep mask) and sounds (I have a fish tank in my room which has a filter running at all times).

It’s always been hard for me to get up in the mornings. I greatly dislike getting up before I’m ready to wake up naturally, and I love sleeping for as long as possible, which used to be a problem but isn’t as much of one anymore. I feel like sometimes I’m addicted to sleep, always chasing that perfect, restful night, which comes so so rarely…

I’m very into pasta salad these past two weeks, next week I’m going to mix it up and have something else but right now this has been a good lunch.

This one I made with tortellini, with some peppers and strawberries, some matcha alligators from Squish for a little sweet treat, my life’s blood - double bergamot, and a banana.

Yesterday was a really tough day emotionally. I couldn’t find myself invested in anything that went on, and I couldn’t really bring my energy levels up.

Today I’m running our Curse of Strahd D&D campaign for the first time in a couple months. I’ve been emotionally seperated from it for a while so it’s intimidating to start up again, but all I can do is my best.

I slept super well last night which was nice, I can’t remember the last time I slept that well. The cool breeze through my windows and the smell of damp fall leaves was so comforting it was almost hypnotizing.

I love fall, I love Halloween, I can’t wait for more fall things in my life!

I’m no longer counting days, it’s getting weird and confusing and hard but September is Health Goth’s 3rd month.

Today I was sick and running a fever so I consumed a lot of water, as you should when you don’t feel well! I also had a nice fried egg sandwich with ham for breakfast and made some fajita pasta with pork for dinner.

I plan on meal prepping for my upcoming work week tomorrow so stay tuned for that!

All Natural Red Velvet Cupcakes¾ cup beet puree (directions follow) 1 tablespoon freshly sq

All Natural Red Velvet Cupcakes

  • ¾ cup beet puree (directions follow)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 1/2 teaspoons rice vinegar
  • 1 cup sugar
  • 1 stick butter (8 tablespoons), at room temperature
  • ¾ teaspoon pure vanilla extract
  • ¾ teaspoon kosher salt
  • ¾ teaspoon baking powder
  • 1 1/4 cups unbleached all-purpose flour (not bleached flour)
  • 2 eggs
  • ½ cup buttermilk
  • 1 tablespoon natural cocoa powder (not Dutch Process, or dark cocoa powder)

1. Preheat oven to 350ºF. Line a standard muffin tin with paper cupcake liners. Empty the food processor of the beet puree (see below). Measure out ¾ cup of beets and add it back to the food processor fitted with the steel blade attachment. Save any extra beet puree for another use. Add in vinegar and lemon juice (if you didn’t already add it when you were pureeing the beets), followed by the rest of the ingredients. Pulse the mixture a few times until the batter is smooth. Scoop mixture evenly into cupcake liners.

2. Bake for 18 minutes, or until the cupcakes in the center spring back up when touched. Remove cupcakes from the pan and place on a wire rack to cool completely. Frost with cream cheese frosting (I used a large pastry bag and a large star tip—Wilton 1M).

roasted beets

2 medium beets, or 1 large beet, scrubbed and rinsed

1. Preheat oven to 400ºF. Fill a small roasting dish with ½ inch of water. Place beets in the water, and cover with a piece of parchment paper and a large piece of aluminum foil. Roast for 60-90 minutes, or until the beets are very tender to the point of a knife.

2. When beets are cooled completely, peel, and cut into large chunks. Place in a food processor fitted with the steel blade. Process for 2 minutes, or until extremely smooth. If the beets need a little moisture to help them along, you can add the lemon juice and the vinegar from the recipe above, and then just don’t add it later.

cream cheese frosting

  • 1 8 ounce package cream cheese, at room temperature
  • 1 stick (8 tablespoons) unsalted butter, at room temperature
  • 2 cups confectioner’s (powdered) sugar
  • 1-2 tablespoons heavy cream
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract

Beat all ingredients together with an electric mixer until smooth and fluffy.

Lighter Sesame Chicken

Serves 2

Ingredients:

  • ½ cup brown rice
  • ¼ cup honey
  • 2 Tablespoons sesame seeds
  • 2 Tablespoons soy sauce
  • 1 garlic clove, minced
  • 1 egg white
  • 2 Tablespoons cornstarch
  • 2 small chicken breasts (12oz), cut into 2″ pieces
  • salt & pepper
  • 1 Tablespoon vegetable oil
  • 2 green onions, chopped
  • 2 cups broccoli florets

Directions:

Prepare rice according to package directions. Meanwhile, combine honey, sesame seeds, soy sauce, and garlic together in a small bowl then set aside. In a separate larger bowl, whisk together egg white and cornstarch until smooth. Season chicken pieces with salt and pepper then add to egg white mixture and toss to evenly coat.

In a small saucepan, steam broccoli until crisp tender then set aside.
Heat oil in a large skillet over medium-high heat, then carefully add chicken. Cook for 3-4 minutes a side, or until cooked through. Turn off heat and remove skillet from burner.

Add prepared sauce and green onions then toss to combine. Stir in broccoli, then scoop mixture into bowls over cooked rice.

Progress is slow but steady
I stopped focusing so much on the scale number because I hit some big for me goals✅
I fit in Justin’s pants, which if you missed my early season breakdown about being so much bigger than my boyfriend this is a big thing.
I was able to buy single digit size pants for the first time honestly ever.
I don’t feel so uncomfortable with my body.
I haven’t stuck to a real diet much, i work out when I can.
Honestly it’s a lot of Keto coffee☕️, greens and Thermofit and some wraps.
I’m not trying to get fit just for Summer☀️, I am trying to be fit for life
